My veggie menu for the week
I menu plan but not by days so I was going to try this week with the families schedule. Here is what I am going to go for. The dh is eating more vegetarian meals, thanks to me. heh.
Mon - just going to be leftover veggie spaghetti and corn or dh can make a frozen pizza. I have veggie spring rolls with rice calling my name. Home alone until late.
Tues - Bean tostadas with all the fixins and spanish rice. I've got quac, tomatoes, refried beans, cheese, salsa, lettuce, and sour cream.
Wed - Spinach manicotti and the leftover veggies turned into a salad.
Thurs - Breakfast for dinner. Eggs for dh, pancakes, hash browns, and pears. (dh request)
Fri -Pasta dish with fresh broccoli and carrots and all the veggies I find to make with it and garlic bread.
Sat - no cooking and the dh will not be home so just leftovers of something.
Also been into baking lately. I have a few things I want to make like some vegan chocolate cupcakes. Fun!
Just testing the waters and see how well this will work out. I have several other new recipes planned next week that I want to try.Last edited by Palooka; 04-13-2009 at 05:15 PM.

I agree, it sounds really good. What kind of sauce do you use for your pasta with fresh veggies? I always have lots of fresh veggies and I'm trying to find a pasta dish to make.

Have you ever had pesto sauce? It is so yummy. I usually buy it in the jar but you can make it home made with basil, pine nuts, garlic, and olive oil in a blender. Well there is several ways to make it. It's great with sandwiches too.
I keep it simple with olive oil and some type of vinegar wisked together with what ever spices you like. I love basil.
Or you could even use your favorite salad dressing even.

You know, I never think of buying Pesto Sauce. I'm going to do that. I love a pasta primevara type of thing, I always have lots of veggies on hand and for just me, a jar would last a while. Thanks for the idea!
