WEEKLY MENU, Nov. 22
This week will be a tight one if I am to stay within my budget. I may end up going over just so I am not compelled to eat out! Lesser of two evils.
SUNDAY: Potato soup
MONDAY: Ham and potato casserole
TUESDAY: Beef stew
WEDNESDAY: Leftovers
THURSDAY: Spaghetti
FRIDAY: Crockpot chicken, green beans, rice
SATURDAY: Leftover buffet
I need fruit and veggies - trying to eat better this week, something for sandwiches, bread, milk, and powdered juice mix. I also need some chicken of some description for Friday (whatever is the best deal) and some ground beef - I am completely depleted. Luckily GB is on sale this week so a minor stock up.
Next Sunday we will have our US Thanksgiving turkey. THis will take us over our hoped for budget but we will have spectacular leftovers.
I am bummed to be going over budget. :-(
It looks like I am going to be over by about $30-40 this month.

looks good - don't forget to include leftovers for lunch
11% gross to retirement
10% takehome to tithe and offerings
emergency fund maintained at 3000(works for me)
credit card debt 7500
mortgage free
freedom accounts/sinking funds that ebb and flow
then live on the rest!
i am trying something new. LDS church advises savings or debt repayment should be the same as the tithe. 10% each.

Well lets see here on the ol' list...
Sunday- leftover enchiladas (since we still havent gotten around to eating these)
Monday/Tuesday- brown rice casserole/red pesto ravioli on spinach bed (I dont feel so hot when I eat ravioli so the boy will have that dish)
Wednesday- leftovers or maybe some soup/chili in the freezer or salad
Thursday/Friday- Thanksgiving- its only the two of us so we are having a turkey breast, garlic mashed potatoes, sizzled green beans with prosciutto, cornbread dressing (my first!), and some form of pumpkin pie (will probably make the crust myself)

Monday-grilled ham and pepper jack cheese sammies with oven fries, pasta salad
Tuesday-meaty rigatoni bake with homemade garlic bread
Wednesday-Pork and noodles
Thanksgiving is a multi-part feast:
Appetizers: meat/cheese tray (using up leftover cheese/meat in fridge, just had to get crackers) and little smokies (had in freezer already)
Main Course: ham, green bean casserole, pasta salad (already diced up veggies for this), sweet potatoes, fresh fruit (Wesley's request), rolls (already in freezer)
Dessert: Snickers Cheesecake (will make ahead)
Friday- scalloped ham and potatoes (made with Thanksgiving dinner leftovers!)
Saturday-Potato Topped Beef Bowl (this is a new recipe)
Sunday--leftovers
All of this is depending on Maggie and her arrival.McD

Its not THAT Greek, nor is it THAT complicated but it was super easy to put together and paired with a salad it made for a nice dinner that stuck with me through my very physical second shift seasonal job! I would make it again if I had leftover rice (or made a double batch as part of another recipe) but probably not on its own.

We have chili and broccoli cheese soup I made to use up.
I have 1/2 mincemeat pie and most of an apple. I bought another turkey (Honey sickle at .79#) and a buch of small steaks that will become stir fry and maybe beef tips and noodles. If i feel up to it rice crispy treats will appear.
When I do what TBD.
