    Default one potato, two potato....

    Help! I have 2.5 lbs of russet potatoes to use up quickly. They are starting to go soft on me. There are about 10 medium sized baking potatoes.

    I've done baked potatoes.

    I've done mashed potatoes.

    I've done potato salad.

    I have 4 lbs of pre-cooked baked stuffed spuds in the freezer.

    Any creative ideas for using these up?

    Make scalloped potatoes? Potato/cheese casserole (see Anna Thomas' Vegetarian Epicure, vol 2 "Italian Potato Cheese Casserole yum!). Potato candy? Freeze individual servings of mashed potatoes? Plant them? Baked potato soup? Stuff baked potatoes w/ ground round in gravy and call it dinner? Hashbrowns? (I made that for dinner a few weeks ago...it was a HIT! See allrecipes.com...Anna's hashbrowns (I think).Hash?

    That's all I can think of off the top!

    Do a hash...browned, cubed potatoes, onions, carrots, meat of your choice. Top with cheese...yummy!

    The word Russet just makes me think of Russ prancing around in a tutu...
    If you could kick in the pants the person responsible for your problems, you wouldn't be able to sit for a month.

    Potato soup?
    I love oven fried potatoes. Cube potatoes and place on baking sheet, add olive oil and fav spices, toss to coat. I like garlic salt & pepper on mine. I bake 425ş for 25 min turn and bake til crispy. I sometimes run mine under the broiler to brown them even more.

    i do potatoe skins.. bake them with olive oil and sea salt.. let cool..
    cut in half and scoop out leaving about a 1/4 of an inch. i then take them on a cookie sheet and put in freezer when frozen i take out and pop into a freezer bag. i then put them in an ice cream bucket and put back in freezer. when ready to use i put them in a bowl toss with a bit of olive oil. dress with bacon and cheese, pop in oven till hot and melty.... i always have these on hand (for parties i cut them in half) with the insides i make potatoe salad or potatoe soup.

    Hash browns, mmn! I'll have to dig out Grainlady's directions for freezing those ( at least I think they were her directions...)

    potato candy?

    ranch potatoes in the crockpot? cube potatoes, add 1 pkg dry ranch dressing mix/8 oz bar of cream cheese, cook on med until potatoes are done - 4-5 hours.

    gnocchi

    Potato dumplings:

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    8 medium Potatoes
    1 Egg Yolk
    1 tablespoon Salt
    2 cups Flour -- up to 2 1/2 cups
    1 tablespoon Vegetable Oil
    1/4 cup Butter or Margarine
    1/2 cup Grated Parmesan Cheese

    Wash and puncture potatoes in several places with a fork. Bake 1 hour in a 350 degree F oven or until tender. Remove and discard skins. Mash potatoes through a ricer or food mill into a large bowl, and let cool a little. Add egg yolk, salt, and 2 cups flour. Mix well. Knead dough on work surface or board into a ball. It should be soft and a little sticky. If it's too sticky, add a little flour. Lightly flour surface and hands. Break dough into egg-size pieces. Roll until thickness of thumb. Cut roll into 1-inch pieces. Push each dumpling against the back of a fork to imprint a pattern. This helps them absorb more sauce (and makes them a little prettier). Arrange them on a floured tray. Fill a large saucepan 2/3 full with salted water. Bring to a boil. Add oil and dumplings. Stir, to make sure they don't stick to bottom. When they come to surface, let them cook 10-12 seconds more. Remove with a slotted spoon as they are done. They get soggy if overcooked (they absorb more moisture than regular pasta). Serve with butter and Parmesan cheese or your favorite sauce.

    My vote was what sunshine had said

    What about making potato pancakes - Latkes Recipes - Hanukkah Potato Pancake Recipe - Collection of Kosher Chanukah Recipes - Jewish Holiday Cooking or cutting them up into oven fries/wedges and flash freezing them or dicing some up to use in a stew?

    Ooh ooh just found this recipe - looks interesting and I'm sure you could toss in extras too: cooked crumbled bacon (or bacon bits?), green onions or sauteed/caramelized onions then bake - YUM! Mashed Potato Muffins

    If you dehydrate them, you need to blanch them first or you'll have a black, icky mess. . .
