For breakfast you could make a big fretta. If you're not familiar, it's essentially scrambled eggs with stuff cooked inside. Use whatever veggie and meat people like, cook them up first then toss in well mixed eggs.

One suggestion would be....
Shepard's Pie....... to us that means ground turkey layer on the bottom, a layer of peas and carrots, covered with Mashed Potatoes... you can cook ahead... and just warm it up on the night you are scheduled to serve it.... and could serve a side salad with it....
Do you need to provide the drinks for the meals you cook?
Another suggestion, I would give would be to coordinate with the others cooking.... I say this because...............
When my mother in law was sick, the church got together and planned meals for a week (5 nights) for her and the family..... and they ate Shepard's Pie 3 of the 5 nights, LOL....
Have a GREAT TRIP!

All are good Ideas.
We do need to coordinate. To be perfectly honest I don't know the full plan. Last yr we each chipped in money and 3 sis took care of planning, buying and preparing. I did all the laundry and helped with the DC. My mom and 2 oldest nieces (they have children) helped with the DC. BILs cleaned. My oldest sis felt like she was doing all the meal planning and most of the cooking (she hates to cook). So it was decided that we would take turns this yr.
Drinks are anything the DC can have. If they can't have it, you have to buy your own.
