    Default breakfast on the road

    I'd like to start eating my breakfast on the ride in to work. Looking for ideas for things I can just grab and go in the morning with minimal preparation.

    Right now I'm thinking tuna salad sandwices. I could even make the tuna salad the night before if I wanted to save more time.

    If I do this, I'll be eating a lot of fish, as I already eat steamed fish for lunch.

    So two questions, will I go mad as a hatter if I eat this much fish? (Meaning, will I run the risk of mercury poisoning or other environmental contamination issue).

    Also, what are some other ideas for on-the-road breakfasts with little to no prep required in the morning. Obviously, I'm not married to the traditional breakfast menu.

    24 Breakfast Burritos - OAMC

    Ingredients
    12 eggs, beaten
    1 lb bulk sausage, cooked (or crumbled links)
    1/2 cup chunky salsa
    2 cups cheddar cheese, shredded
    24 flour tortillas

    Optional Ingredients
    1 green pepper, finely diced
    6 potatoes, shredded and fried until cooked through or hash browns
    jalapenos, slices
    1 (4 ounce) can chopped green chilies
    1-2 garlic cloves, finely minced
    1 onion, finely diced
    1 tomato, peeled and chopped
    2 green onions, sliced with tops

    Directions
    1 Scramble eggs in large skillet until done; stir in cooked sausage and salsa.
    2 Warm tortillas in microwave 20-30 seconds or until warm and flexible.
    3 Place 1/2 cup egg mixture into tortilla; roll burrito-style.
    4 Freeze burritos in single layer on lightly greased cookie sheet.
    5 When fully frozen, wrap burritos individually; place wrapped burritos in large zip-top freezer bags; freeze.

    TO SERVE: Unwrap burritos from foil or plastic wrap that you used for freezing.

    Wrap in a paper towel.

    Cook in microwave until heated through (about 2 minutes).

    I do this. I take peanut butter and banana on a flour tortilla. Sometimes I take hm muffins and cheese. Empanadas or samosas are also good, as long as there is a protein source in the filling (you could fill them with more fish!)...good thing about these is that you can make lots and freeze them)

    You can make hm versions of a mcmuffin and freeze ahead. Just thaw one out the night before, nuke before you hop in car and go.

    HM breakfast bars with lots of nuts and dried fruits, wholesome whole wheat nut & fruit muffins, pieces of fruit w/slices or cubes of cheese, smoothies with ground flax and if its in the budget protein powder.

    The point is you need to eat in the am and something substantial so you're not starving by 10am. Make sure it has whole grains which take longer to digest and protein to help keep you sustained until it's am snack time (or lunch for some people).

    I fix my dh breakfast everymorning. I do sometimes the bulk cooking for sausage egg burritos, sometimes i do the sausaeg biscuits, also have done cinnamon toast.

    I like pb&j sandwiches for on-the-go. Sometimes I toast the bread first.

    For bf's bday I gave him a collapsable cooler for the car filled with on-the-go snacks like those breakfast bars, granola bars, beef jerky, snack pack chips, and then some homemade baking. He has two jobs and three kiddos so very busy running around between all that. Water bottles will be good too, for you. Thirst can sometimes be mistaken for hunger.

    Hey, if we're making them ourselves, maybe we could find some turkey chorizo. TYVM for the ideas so far! Feel free to keep them coming.

    We just got a coupon for free mayo and stocked up on canned tuna on sale last week and the double fiber bread is on sale now, so I think tuna sandwiches for next week, (hmm... getting sick of sprouts for lunch, maybe i'll toss them in tuna sandwiches for bfast next week), but might just try a big batch of some sort of mexican-ish thing for bfast burritoes next weekend.

    I make the egg, veggie patty sausage (by Morningstar) muffin sandwich. I make 6 on Sunday and just pack them into the fridge. 60 sec in the microwave and I have a hot tasty sandwich with 250 cal including my whole grain.

    I also use the Pepperidge farm deli round (or local knock off) and pre heat Morning star veggie burgers and make up enough for the week. I like the deli rounds because they fit perfectly and are easy to manage while driving.

    Per week amounts for tuna are based on a person's weight:
    -25# - 1 T.
    -50# - 2 T. (or 2 oz.)
    -75# - 3 T. (or 3 oz.)
    -100# - 5 T. (or 5 oz.)
    -125# - 6 oz.
    -150# - 8 oz.
    -175# - 9 oz.
    -200# - 10 oz.

    Fish high in mercury:
    Swordfish, shark, tilefish (aka Golden Snapper), King Mackerel, Tuna (tuna steak)

    Fish low in mercury:
    Salmon, Flounder, Cod, Catfish, Trout, Pollock (the fish used for imitation crab)

    Use canned salmon, egg salad, or chicken salad instead of tuna.

    How about:
    -wholegrain muffins
    -fruit and yogurt
    -granola and yogurt
    -quick breads (banana bread, pumpkin bread...)
    -spread peanut butter and honey on a pancake and roll it up
    -homemade smoothies

    Banana Wraps
    Spread peanut butter on one side of a flour tortilla. Add a whole, peeled, banana and roll it up. You can cut it into pinwheel portions, or serve it whole.

    Whole Wheat Banana Muffins
    Heavenly Homemakers

    1 3/4 cups whole wheat flour (I use freshly ground flour from hard white wheat)
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon sea salt
    1 cup mashed over-ripe bananas (about 2-3 bananas)
    1/3 cup honey
    1/4 cup melted butter
    2 eggs

    Stir together flour, baking powder, baking soda and salt. In a separate bowl, mash bananas, or puree them in a blender. Mix mashed bananas, honey, melted butter and eggs into flour mixture.

    For Bread: Spread batter into a well buttered bread pan. Bake in a 350° oven for 50-60 minutes or until a toothpick inserted into the middle comes out clean.

    For Muffins: Spoon batter into 12 buttered or paper lined muffin tins. Bake in a 400° oven for 20 minutes.

    Cheese sticks and a bag of nuts, pb&j, protein shakes with fruit or smoothies, two peices of fruit with almond butter, bagels and almond butter, peanut butter on whole grain waffles(like a sandwich) hm muffins and breakfast bars.

    I really like Ceashels idea using Morningstar products.

    Eggy muffin things. Make a quiche and cook it in muffin cups. Nuke them for 10 secs in the morning. You can make them with a biscuit crust. (you don't have to worry about loose fillings in a sandwich.) OR you can make muffins with a bunch of nuts/flax in it to make them filling.

    Dry granola - with a cup of milk on the side (make homemade granola and add all your favorites)

    Smoothies - mix up quickly, pour into travel mug. . . use up leftover fruits, yogurt, etc. Add flax seed, etc. for fiber and added nutrition.

    Tried the banana, peanut butter taco this morning. Was tasty. Using small corn tortilla (used two and broke banana in half), a locally made peanut butter with just peanuts and salt and I toosed in some honey roasted peanuts too.
