All served with a salad
Macaroni and tomatoes
broccoli or cheese pizza
linguine with clams
pasta and sauce (alfredo, tomato....)
veggie lasagna
eggplant parm
bean burritos
broccoli, potato, veggie soups

Also works great as a taco salad base. I omit the brown sugar and add jalapenos, extra onion and tomatoes instead of salsa. It gets better every day you reheat the bean mixture it seems. We usually have them with guacamole & chips.

I omit the sprouts because I hate them LOL. Sometimes we have homemade baked potato wedges, or just chips with it.

I make my own veggie stock.

And add chopped up green pepper, fresh tomatoes, and onion. We have it with olive oil and bread or Caprese "Salad" : Insalata Caprese I Recipe - Allrecipes.com or a simple Bruschetta.

Also with bruschetta or Caprese salad
Anytime cheese is called for I use the 2% version. Reduced fat sour cream instead of regular. Reduced fat cottage cheese. Milk is 1%. Pretty much the lower cal. version of all dairy products.
We eat meatless probably 3 or 4 times a week, and sometimes seafood a night or 2. You wouldn't believe what kind of a difference it makes in your grocery budget not buying several pounds of meat each week. Just make sure you get enough protein with eggs, nuts, beans & rice, etc. if you eat meatless all day long. I end up eating way too much bread if I don't get enough protein throughout the day.

Stir fry with tofu or shrimp
Vegetable fried rice- egg optional
Stuffed peppers
Peppers & cheese quesedillas
Lentil soup w/vegetables
Mango salad
Grilled tofu/vegetable skewers/kebabs
Grilled veggie rolled up in a tortilla - with or w/o hummus or baba ganouj
Falafels w/tabouleh
ALT - avocado lettuce tomato sammies
Veggie subs
Egg/tuna/salmon salad sammies
Dolmades (rice rolled up in grape leaves soaked/marinating in a vinaigrette - Greek food)
Veggie nachos
Dinner sized Cesar salad/Greek salad/spinach salad w/mandarin oranges, hb eggs and walnuts/California salad: greens with diced apple & trail mix
Wow - I had more ideas then I thought - too bad I have a hard time convincing my dad to eat more of these.2012: The Year Of The Purge!

I don't really have anything new to add. Got some additional ideas for myself though! Some great ideas here! I will be having the best ever veggie sandwich for lunch tomorrow! That sounds great!

All great suggestions. (except the ones that mention seafood. *snicker* had to throw that in.
)
Eggplant parm
veggie lasagna
stuffed red peppers or green with rice, tomato sauce, tomatoes croutons, cheese, etc. Even olives
Stuffed tomatoes with lentils
HM cabbage rolls
Thia food
stir fries a million ways with lots of veggies and brown rice
veggie or black bean burgers with all the fixins
baked potatoes topped with chili beans
beans stews and soups
veggie quesadillas
roast several veggies in oven and stuff in a burrito shell, serve with beans and salsa
chickpea salad sandwiches (instead of tuna, you replace with smashed chickpeas, oh it's so yummy)
zucchini cakes
grilled veggie kabobs served with baked beans
Anything Mexican, just use beans to replace the meat
It's endless....I love to use my veggie cookbooks to fancy things up.

baked beans and biscuits(I do use 2 pieces of bacon in this but I call it a meatless meal)
meatless chili with chips or cornbread
fried mush and fruit salad
smoothies
greens or beans with potato wedges, biscuits or cornbread
cream gravy with grits or rice, steamed or sauteed veggies(I like a mushroom/celery/carrot combo)
cheese fries, salad
pbj's
grilled cheese, tomato soup
waffles and ice cream
portobello burgers
corn on the cob, potato salad or coleslaw
Fettuccine Alfredo with peas
cheese fondue, crudites
I have no problem making a meal out of sides. 3 or 4 non-meat choices make great meals. I just listed some of the combos I tend to put together but there are millions.
I also have a high dependence on dairy products to replace meat. I'm trying to get more creative about that.~~Constance

when i was in a house of meat eaters i would just eat in front of them, then they wanted what i had. the chorus of "this is good! what is it?"
then they were surprised to learn it had no meat in it.
especially surprising is the monastery lentils. i could fool men with it as they scarfed it down, wanted more, then i told them what it was.
i used to be ovo-lacto- vegetarian.11% gross to retirement
10% takehome to tithe and offerings
emergency fund maintained at 3000(works for me)
credit card debt 7500
mortgage free
freedom accounts/sinking funds that ebb and flow
then live on the rest!
i am trying something new. LDS church advises savings or debt repayment should be the same as the tithe. 10% each.
