    Default What is your favorite recipe that I MUST try?

    I am trying to make a master meal plan of like 50 meals that I can run to every week to pick something new. So far I have 20.

    I would like to try to stay healthy, although some dishes are fine not healthy, and I need something that won't give me major heartburn. Usually red pasta sauce does.

    So, share your favorite recipe that I should add!!

    Ash you've only given it 2.5 hours since you posted the thread. Don't fret....people are busy getting a routine established b/c all the kids went back to school.

    How about giving us ideas of what you like and don't like? I could give you a recipe for pickled pigs snout but you may not like it - kwim? Give us a starting point.

    Ashley, would you be interested in some Vegetarian recipes? I have a few favorites, but sitting in the dark and can't post them now from my cookbooks.

    ETA, also I have a killer low calorie brownie recipe from one of the chefs that cook for the biggest looser.

    This is one of my favorites. I saw her make it and had to try it. It's been a staple of my fall and winter menu.
    Mexican Lasagna Recipe : Rachael Ray : Food Network

    I substitute whatever ground meat I have and it usually ends up beef and turkey.
    I also throw in extra onion, carrots, and celery to boost the veggie content.
    Instead of the cumin and chili powder, I'll use an envelope of taco seasoning.
    I use canned corn (have a lot right now) and drain it well and have used hominy in the past.
    I use original tortillas, not the flavored.
    I've never garnished with scallions.

    This goes together very well in a 8-9 inch pie pan... since the tortillas are round.

    I make a double batch of the meat mix and freeze half for a future lasagna.

    Ingredients

    * 3 tablespoons extra-virgin olive oil
    * 2 pounds ground chicken breast, available in the packaged meats case
    * 2 tablespoons chili powder
    * 2 teaspoons ground cumin
    * 1/2 red onion, chopped
    * 1 (15-ounce) can black beans, drained
    * 1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
    * 1 cup frozen corn kernels
    * Salt
    * 8 (8 inch) spinach flour tortillas, available on dairy aisle of market
    * 2 1/2 cups shredded Cheddar or shredded pepper jack
    * 2 scallions, finely chopped

    Directions

    Preheat the oven to 425 degrees F.

    Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.

    Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

    Default Easy EASY Cheeseburger Pie

    You can make this in the round, but also works well in an 8x8

    1.5 cups saltine cracker crumbs
    .25 cup butter (room temp)
    .5 cup onion (chopped)
    .5 lb ground meat (or substitute)***
    2 eggs (beaten)
    1.25 t salt
    1 cup shredded cheese

    make crust (1 cup crumbs & butter) and put in to your baking pan of choice

    cook meat & onions - spoon in to crust

    in a saucepan cook eggs, milk, salt .5 cup cheese - melt cheese and pour over meat.

    top with remaining crumbs and cheese

    bake 325* for 45 mins

    *** I have used ground chicken, turkey, pork and beef. I also have used a mixture of meat and old fashioned oats

    My "throw together" chili recipe that I threw together for the first time a couple of years ago is one of my "go-tos" because it's quick and easy. You can also scale it down for two or three people by cutting it in half easily.

    Here is the 6-serving version:

    1 lb lean ground beef
    diced onion to taste (I use about 1/2 cup)
    15 or 16 oz of tomato sauce
    2 15 oz cans of diced tomatoes (with liquid)
    2 15 oz cans kidney beans, drained & rinsed (light or dark red, your choice)
    chili powder to taste (I use about 2 tbsp), or other seasonings like cumin or cayenne if you like your chili hot
    6 oz can tomato paste (optional, I add it only if it looks like it needs thickening up after I add in all of the canned goods)

    In a small stockpot, saute ground beef and onion until beef is browned and onion is softened. Add in all of the canned goods and chili powder, and evaluate the thickness. If it needs thickening, add tomato paste. Bring to a boil, then reduce heat and simmer for at least 15 minutes to let the flavors meld. Serve with oyster crackers and cheddar cheese.

    Meatloaf is one thing that I cook most often: Now mind you that I cook for 6 people, so the amounts could be smaller if needed.

    3 lbs burger
    3 eggs
    1 onion rough chopped
    2 pkgs. onion soup mix
    1 large can mushrooms
    large amount of crackers crumbled
    ketchup

    mix all ingredients (minus ketchup) put into large glass baking dish...cover with ketchup.....bake in 350 degree oven for 1 hour....delicious!!

    Rachel Ray's Best Chicken Pot Pie Stoup

    This is really good! You can use leftover cut up chicken or canned chicken. I have used both and they are both great.

    1 large onion -chopped
    3 carrots -diced
    3 stalks celery-diced
    1 regular potato ( I have used a sweet potato)- diced
    1 bay leaf
    13 oz can of chicken w/juice
    1-32 oz Chicken broth or stock (can use boullion cubes)
    butter
    flour
    thawed frozen peas


    Saute onion, celery, carrot and potato in soup pot with a little butter and olive oil. Add salt and pepper to taste cook till somewhat tender. Add 13 oz can of chicken w/juice and the broth.
    Put 3 tbsp of butter in bottom of pan with 2tbsp of flour cook one minute. add to soup to thicken At the last add 1 1/2-2 cups thawed peas.

    This really does taste like chicken pot pie.

    chicken and rice...
    I use thighs (more flavor) put some in a crock pot and cover with water add onions , celery, carrots.
    cook till done.
    serve over rice.... yummy also sometimes we add a can or 2 of spinich to the chicken.

    Alright, on the Mexican/Latin front I've got....

    "Homemade" taco shells

    Ingredients

    * corn tortillas, taco size
    * cooking spray
    * chili powder
    * garlic salt

    Directions

    Spray each tortilla with cooking spray (lightly!) on each side. On ONE side, dust with chili powder and garlic salt. Hang over 2 oven bars and cook at 400-425 until crisp and browned.

    Just an FYI, these take a couple tries to get perfect. If you cook them too long, they taste burnt but if you don't cook them long enough, they're kind of "chewy." Once they get close to being done you have to watch them like a hawk. Also, I learned the hard way, if you have an electric oven, put cookie sheets on the rack below so if the tortillas slide off...you don't start a fire. It's no fun lol. I made these for my family when BF and I lived there for a short while before moving, and now they won't buy the pre-made shells anymore!

    Taco Soup

    Ingredients

    1 can Campbell's condensed Fiesta Nacho cheese soup
    1 can (14.5 oz?) diced tomatoes with green chiles (ie Rotel)
    1 lb. browned ground beef
    1/2 packet taco seasoning (or just make your own, chili powder, garlic salt, you get the picture)
    1 cup 1% Milk (use whatever kind you like)
    Crushed Tortilla Chips
    Sour cream
    Shredded cheese

    Directions

    This is super quick once the beef is browned. Add the ground beef, soup, tomatoes, and milk to a 2 qt sauce pan and cook over medium heat until heated through. Ladel soup into bowls and top with shredded cheese, a couple of dollops of sour cream, and crushed corn chips. Not the healthiest recipe, but it's really good lol. Plus, you can always add a salad It makes about 4 servings.

    I usually add a little water or lemon juice in place of some of the olive oil. You do want to use a good EVOO for this recipe, because you can taste the oil. I usually serve it over linguine.

    You really need to serve this one with rice or bread because the sauce that the chicken cooks in is REALLY good for dipping.

    Omit the shortening, it's unnecessary really. A little olive oil works just fine. I also use dijon mustard instead of dry, and add some Old Bay Seasoning.

    I know your post said your favorite RECIPE, singular...but, I couldn't choose just one and these are all recipes I LOVE so, there ya have it. I have listening (or reading I guess..) problems
