    Default Italian sausage & potatoes....what should I make?

    I'm trying to think of what to make for dinner tonight. I have italian sausage and pototoes. I don't really want a red sause and I don't want like a cream soup based casserole. What else is there?

    I'm thinking of a light sausage gravy/sauce, pan fried potatoes and what? what could I add to make the sauce and should I put it over pasta or rice or even as a sandwich?

    sausage and potato hash
    sausage gravy and biscuits with fried potatoes
    sausage with hash browns and eggs
    sausage and pepper sandwich with french fries or potato salad
    sausage stuffed potato skins

    so here's what I did....

    browned large chucks of sausage, threw in a sliced onion, cooked that down a bit then added small cubed potatoes. Let that get all happy and then I added a cup of beef broth. Cooked that down a bit and put it on a grinder with pickled green tomatoes.

    It was quite tasty and hit the spot. YUM!
