    You can cook pasta in it. Quite tasty :-)

    Boil potatoes in it, then use them in a ham/cheese/potatoe casserole. Same with pasta.
    Scalloped potatoes with ham.
    Boil cabbage in it.

    Red-eye gravy? Not exactly healthy, but it's a southern thing. Google the recipe. It's sure yummy. Bet hubby would at least like it.

    Make a soup out of it with potatoes (to help cut down the saltiness).

    ~Dublin Coddle. Basically potatoes, onions, sausage and bacon cooked in the slow cooker in ham broth. Very tasty!
    I'm sure it'd also make a great base for broccoli cheese or potato soup. ~

    Do you eat green beans? They taste great simmered in ham stock. You could also use it for making rice or even risotto if it isn't too overpowering.

    My Mom always froze it in small batches to add to soups as she needed. It really helped round out the flavor.

    How about collards, kale, cabbage, brussels sprouts sauteed or boiled in the broth until crisp-tender? Yum!

    This recipe for Green Beans with Ham Hock & Potatoes is so so good. You can use the ham broth in place of the hock and reduce amounts of ingredients, 3 lbs of beans is alot, lol. It's mostly the heavenly flavor these items pick up from the broth that just send the flavor over the top. This stuff is addictive.
