    Carraba's Lentil Soup

    I decrease the meat and increase the veggies. Really, I just use it as a guideline and fill in with what I've got on hand. Super yummy!

    Bean, beef & cornbread "stacks"

    Brown 1 lb. hamburger meat, season it with salt, pepper, onion powder, a little chili powder & cumin.

    When browned, stir in a large can of Ranch style beans.

    I make regular cornbread batter, just a bit thinner than usual and fry like pancakes in a hot iron skillet with a little oil in it. I usually make them about 3" in diameter. When done (nice & crunchy), top with a scoop of the bean/meat mixture, then some grated cheese & a dollop of sour cream. Entire meal in a "stack". Doesn't take but 1 or maybe 2 to fill a body up.

    works out even cheaper if you use ground turkey and make your own "ranch" style beans using dried pinto beans.
