    Since my dd can't have wheat/flour - we use this sometimes for pizza crust:

    I completely forgot about breakfast burritos.

    Love to do that with scambled eggs.

    We often have breakfast for dinner when eggs are the main protien source.

    Libby, I don't have access to salted eggs. Can I just use regular eggs?

    Us too!

    For inexpensive protein I make pancakes and waffles with white bean puree mixed in the batter for the protein. They really fill the guys up and I don't tell then there is beans in the batter or they'd likely turn their noses up at it. I do it with muffins too.

    Honestly - regular eggs is what we use hence the soy sauce. If its not salty enough when you're about to serve, you can just add more soy sauce or table salt to your liking. Once you figure out your seasonings you won't really need to measure.

    We do a lot of low salt/no salt recipes whenever possible but as HBA items are to me, Chinese condiments is to my dad. He may not add 'salt' when cooking but every condiment he puts in there to 'change it up' definitely has enough sodium in it, if not MSG.

    My suggestion to you, try it with one egg - no meat - and see how much seasoning you need and go from there when you multiply it per egg.

    Try it...you might like it

    I like making Breakfast Burritos with scrambled eggs, meat, cheese, onion etc. Just fill up a tortilla and instant breakfast on the go! lol

    I like also like a fried egg on top of refried beans. Really tasty and filling.

    Egg Bake

    *12 eggs; mix well with 1/4 cup milk(optional - it just keeps the eggs from getting too dried out in my opinion)
    *1/2 to 1 lb cooked sausage crumbles, a few slices of bacon chopped or any other meat you like
    *4-8 oz shredded cheese (sometimes I leave out the cheese)

    Mix all in a 9x12 casserole dish, cook at 375* for approx 20-25 minutes until eggs are cooked through.

    This makes enough for all four of us (all adult eaters) to have two good sized servings each. Use less eggs and reduce the milk if smaller amount needed.

    You can add whatever, like mushrooms, peppers, onions, zucchini, tomatoes, etc...
