lisaflex: thanks! I was trying to remember that site's name. I actually have an account there. Had to rack my brains trying to remember what I signed in as and my password, but finally remembered. It's great! Tonight I'm all over the pumpkin/bean soup. That sounds like such an interesting combination I have to try it.

I also thought of this last night, you have plenty of tomatoes and cheese, get some pasta and you can have spaghetti (maybe make some meatballs) or make a lasagne with that sausage, make a bread dough and make calzones or even a simple sausage pizza.

Thanks CH. I looked through my recipes and am going to make the crock-pot spaghetti sauce. Actually, I'm going to make my own recipe, but in the crock-pot. My recipe has better spicing. Then I can also freeze leftovers for days when we're too busy to cook or too tired.

ETA: the pumpkin/black bean soup was pretty good, and spicy. I had to make a couple substitutions...can't handle the cream, and didn't have veggie stock. Still, not bad. It easily serves 8 people. We froze leftovers for DH's lunch, and still had enough for a meal again. And both of us had 2 bowls of it at suppertime!

Supercook has been great, but it overwhelms me. I'm back here looking over everyone's ideas. We've had enough poultry for the time being, so I think maybe I'll put something in the crockpot today...chili or spaghetti sauce.
