We did Thanksgiving dinner all over again on Friday. On Sat I fried the ham for breakfast. Sat. night I made Shepperds pie with some of the turkey cut up and the leftover mashed potatos. I froze the left over turkey in 1 or 2 cup portions to put in casseroles later on. Hubby ate what was left of the ham in sandwhiches on Monday.

I didn't have any (boo hoo) since I didn't host this year. And I never found a bargain turkey, either, or I would have bought it and made my own "leftovers."
My favorite thing to do with leftover turkey is to add it to a risotto with peas and parmesan. Yum! I also love to make turkey enchiladas, and of course broth from the carcass.
