what are you doing with your thanksgiving leftovers?
How creative are you getting this year? Is it soup and pot pie, or are you trying something new?

Didn't have a big turkey, but my leftover plans are turkey sandwiches, and turkey enchiladas.

the day after Thanksgiving Pizza ( tradition in our house)
The sauce is the cranberry sauce, the meat is turkey, and the cheese is goat cheese.
Delicious!

Already made turkey soup and froze the carcass fro later. Froze 1/2 the double batch of mash for potato soup. And then Ds is home for a few days. Ya know.

I didn't fix huge amounts, so we just had thanksgiving dinner all over again tonight lol. I only had some sweet potatoes left (kids will polish that off tomorrow), and some turkey left. I pulled off all the white meat turkey for turkey salad sandwiches tomorrow, and the dark meat and carcass I boiled up to make some homemade dog food (we don't like dark meat by itself and DH won't eat soup or casseroles @@)

I don't have too too much - I put the wings and drums in the pot with the rest of the carcas for a broth.
I will make some turkey croquets with some, pot pie with some, and a turkey and bean chili with the rest.
I can't be out of money... I still have checks left!

We had turkey manhattans tonight (leftover rolls, mashed taters, turkey and gravy) and will have turkey and noodles tomorrow or Sunday.
Debt free other than the mortgage.

I froze the turkey carcass for soup later. I made potato pancakes with leftover mash potatoes. And we at the rest of the leftovers as meals till it was gone.

I made a pretty small supper so there was a spoonful of this and that left that our youngest ate for breakfast. The turkey carcass is in the crockpot now turning into a lovely turkey broth for turkey corn noodle soup tonight. Good thing to, I'm trying to catch a cold.

DH has pretty much polished off the turkey (there's like 1 slice left) so we won't have the usual pot pie come Monday, so I made a meatloaf for tonight with the leftover stuffing, and we'll have whatever vegs are left to go with it.

All that's left today is some ground turkey for sandwiches this week.. I personally finished the apple and pumpkin pie, mashed potatoes, sweet potatoes, gravy, and stuffing yesterday. To be fair, my wife made a half bushel worth of apple pies last Monday and froze all but one, so they could "technically" be leftovers along with the 23 qts of applesauce she canned.
