Rotisserie Chicken
I’m not a fan of prepared foods, but they do have their place.
In my area a rotisserie chicken sells for 4 or 5 bucks.
They are convenient and a lot of stores sell them.
So, the first meal you can feed four people, adding a starch and a vegetable (fresh or frozen or cooked).
Then you take all of the bones and scrap, boil that for an hour, strain it, de-bone the rest of the meat, add some pasta or rice and vegetables and you get another 10 servings.
So a bunch of easy, health meals for about 50 cents a serving. And no oven or microwave.

I usually roast a chicken for our Christmas dinner or on New Year's Eve. Once all the meat is picked off the bone, I use it to make chicken tortilla soup.

I love the convenience of those grocery store cooked chickens. HOWEVER, a friend that used to work at a local chain said that they often roasted about to go out of freshness date chickens, which I'm sure doesn't render them unsafe or anything, just something I probably wouldn't of chosen to cook when fresher birds were available. Also, I can't partake of them because they often use MSG in the flavorings of them (delicious but so dangerous to me). I often yearn to grab one to make quick work of my recipe that calls for "cooked chicken," but those two issues keep me roasting my own.
Totally debt free since January 2011.

After having worked in a grocery store, there is an ick factor that goes with rotisserie chickens for me. I saw too many questionable food safety practices. Bleh. Besides, roasting a chicken at home is easy peasy.

OOwl-good to know although I'm not suprised. If you made the second thing and then froze it until consumption that should be safer too.
