Your menu looks good.... maybe I'll just come to your house!

Tonight we had ham, potatoes, and green beans in the crockpot.
The rest of the week, in no particular order:
~mexican roast in the crockpot, shredded to make soft tacos w/ lettuce, tomato, cheese
~hamburgers and corn on the cob
~mexican pork chops and steamed veggies
~ranch chicken fingers, potato wedges, steamed broccoli
~buffalo chicken sandwiches, homemade baked fries
That's my tenative list of menus for the week, but, as usual, it's subject to change!

I really have to get through some of my freezer and pantry items before they get "too old" (or freezer burn) so I'm currently forcing myself to go through what I have on hand.
Sunday: leftover pasta stuffed with ricotta
Monday: (freezer burned) perogies fried with some onions, sour cream and a bit of ham
Tuesday: baked tuna sandwich, pickles and baby carrots
Wednesday: hamburger, oven fries and carrots and dip
Thursday: "nicoise salad" with leftover plain tuna
Friday: chicken alfredo (if I can find a chicken breast somewhere in my freezer), spaghetti with meatballs if the chicken is awol (garlic bread on old frozen rolls either way)
Saturday: leftover pasta
Wow...I've never actually thought more than a day in advance so this was a really good exercise for me...I now know that I DO have sufficient food to get through the week and won't be at a loss when it comes to dinner ideas.I want to kill my mortgage! 192,391/197,370 (since July 2011)
I'm attempting to live by the principles of The Compact in 2012. Wish me luck!
2012 Financial goals
- make an extra $15k over and above any flying pay (1705/15000)
- pay an extra $1750 off my mortgage (557/1750)
- bring EF back to $10k - $3533 left to save
- avoid lifestyle inflation
- improve investment plan (change accounts) - *grumble grumble* Bank made a mistake, need to re-do paperwork
The Financial Goals I've achieved: increased RSP contribution to $300/mth, posted budget on FV for review, saved $1600 to go on vacation

Let's see...
Sunday--pork roast from the Crock Pot, Jamacian rice (DH made a double batch for the Scout get together Monday night), salad.
Monday--Potluck with Scouts, brought rice (see above--it was a Caribbean theme)
Tuesday--baked chciken hindquarters, baked potatoes, peas and carrots
Wednesday--chicken noodle soup and toasted cheese sandwiches with slced apples (DH is allergic to raw apples, so he will get applesauce)
Thursday--something with eggs
Friday--I am going to a friend's house, so DH and DSs can fend for themselves.
Saturday--DH is cooking since I have to work.
Sunday--DH's birthday, so I think I will make a nice roast.
