    Default Miserly Monday 10/3

    Today I am going to wash load sheets to hang in the house. I am currently cooking 10 lbs of leg quarters for the freezer for later use. Clipping coupons and opening windows. I hope to have a frugal day. enjoy yours.

    Good morning, FVs!

    I got a little bit of a late start today – I slept in till 7:30

    Today will be a no eat out day and a no coffee shop day!

    I will work a full day (packed all my meals and snacks) and then have an apt at the gym for a training session tonight after work. After the session, I will run around the corner to the new Walmart Market and pick up some ingredients for tonight’s dinner of vegan hotdogs and green bean casserole. I need to finish folding laundry and would like to get an hour of work in on the digital scrapbook.

    If anybody has any ideas on what I can do with 4 Italian Roaster Peppers, I would appreciate some ideas. I got these in our CSA box last week, but don’t know what to do with them. We have been chopping them up for salads and to munch on with hummus – but I would like to try something new with them. I also have a butternut squash – which I have never actually had before – so I don’t really know how to prepare it.

    Are you on a diet? If so, here is my absolute favorite way to cook butternut squash & it doesn't get any healthier than this. Wash squash & cut lengthwise. Leave seeds in. Put 1/2 inch water in baking dish, place squash cutside up. Cover baking dish in aluminum foil. Bake 350 for 40 minutes. After 40 minutes, remove foil & broil for 20 minutes. Squash is done when slightly golden on edges & in centers. The broiling will really bring out the sweetness of the squash. No butter or sugars needed. Hope u enjoy as much as I do

    I took our truck in this morning for a service it didn't need, thank goodness the mechanic was honest. I just got back from my morning walk. I need to pull some weeds, laundry, sweep out the garage, clean out the fridge and make dinner.

    It's been somewhat of a lazy day... mainly cuz I feel like dog poop. but still... doing laundry (esp. the bedding), did dishes, picking up house... have my son's football game to go to tonight... If my headache goes away, I may go ahead & make some banana bread.

    Will Be making a list of what I'd like to get done this week ~ esp organizational wise!

    Yes a beautiful Monday off! I've been busy I opened up the house and washed a load of lights and hung half out and dh's work shirts & jeans went in the dryer. I sent out a rebate for solar lights I got at Menards $10 rebate!!! Paid a Dr. bill. went to the store for tortillas. Went to the Dollar store for a few things. Swept the kitchen & mopped it and the foyer and laundryroom. Dug up some old rose bushes out of the front yard and pitched them in the compost pile. Picked up sticks in the yard too! Whew I'm tired! LOL Just need to make dinner. Also too the dog for a half hr walk.

    Italian peppers are so good roasted with a good olive oil at 350. You can eat them then, put on a salad, puree into a dip etc. You can also stuff them with ricotta, Parmesan, meat , rice or veggies topped with sauce or plain.

    If you want to roast peppers, take out of oven peel and put in a jar topped with olive oil and put in fridge for later use. Do not add garlic as it can cause botulism that you will not see.

    Butternut squash I roast face down with olive oil , puree for soups, or a side veggie, a pie or the freezer to use for later.

    Wow! We are having butternut squash too. I love it roasted. We are adding a spiced gr. beef to ours with a side of quinoa. Today was good. New month and new motivation to get back on the frugal bandwagon like some others. Kids didn't go down for a nap until after I picked them up from the sitters so my schedule is thrown off.

    My allergies are bad today and I really didn't feel well, so I stayed home from work. I clipped and organized coupons, did laundry , and made pork loin, baked potatoes, and green peas for dinner. I will probably go to bed early tonight.

    DH stayed home on a 'sick day' today so we've just been hanging out, laying low & relaxing.

    I basically watched tv, played games on my phone and browsed the web for my menu contributions (sides & desserts) for this weekends family dinner - Thanksgiving!!
