Crockpot Freezer Meals - request from another thread
Here are some freezer meals that will work in the crockpot (some don't specifically call for the crockpot, but they would work just the same). Enjoy!

Black Beans & Rice
2 cans black beans, drained
20 ounces frozen corn
2 cups long grain rice, uncooked
32 ounces salsa (choose your heat--mild, medium, or hot)
3 cups tomato juice
1/2 teaspoon cumin
1/2 teaspoon oregano
2 cups cheddar cheese, shredded
In a large bowl, combine all ingredients (except cheese). Pour into two casserole dishes. Divide grated cheese into two small freezer bags and attach to Black Beans and Rice in the freezer.
To serve: Thaw. Bake covered at 375 degrees for 1 hour. Sprinkle grated cheese over beans and rice, continue baking until cheese is melted.
Serves 8.
Cajun Sausage & Beans
1 lb smoked sausage, sliced into ¼ inch pieces.
16 oz can red beans
16 oz can crushed tomatoes with green chilies
1 cup chopped celery
half an onion, chopped
2 Tbsp Italian seasoning
Tabasco sauce to taste
Combine all ingredients and freeze in Ziploc bag. To serve: thaw completely and place in crockpot. Cover and cook on low 8 hours. Serve over rice or as a zesty thick soup.
Four Beans & Sausage
15 oz can Great Northern Beans, drained
15 ½ oz can black beans, rinsed & drained
16 oz can red kidney beans, drained
15 oz can butter beans, drained
1 ½ cup ketchup
½ cup chopped onion
1 green pepper, chopped
1 lb smoked sausage, cooked and cut into ½ inch slices
¼ cup brown sugar
2 garlic cloves, minced
1 tsp Worcestershire sauce
½ tsp dry mustard
½ tsp Tabasco sauce
Combine all ingredients and freeze in Ziploc bag. To serve: thaw completely and place in crockpot. Cover and cook on high 4-5 hours or low 9-10 hours.
BBQ Meatballs
Meatballs:
3 lbs ground beef
5 oz can evaporated milk
1 cup dry oatmeal (rolled or instant)
1 cup cracker crumbs
2 eggs
½ cup chopped onions (dried)
½ tsp garlic powder
2 tsp salt
½ tsp pepper
2 tsp chili powder
Sauce:
2 cups ketchup
1 cup brown sugar
1 ½ tsp garlic powder
¼ cup chopped onion (dried)
Combine all meatball ingredients. Shape into walnut sized balls. Place on waxed paper lined cookie sheets. Freeze. When fully frozen, place in Ziploc bag and store in freezer until needed. Combine all Sauce ingredients and freeze in separate Ziploc bag. To serve: place frozen meatballs in crockpot and cook on high for about 30 minutes. Pour thawed sauce over top. Cook on high 1 hour. Stir, turn to low and cook 6 - 9 hours.
** Can also use other sauces with meatballs: spaghetti sauce or cream of mushroom soup
Makes 12-15 main dish servings or 20-25 appetizer servings
CHILI and CHEESE ON RICE
1lb ground beef
1 onion
1 tsp dry oregano
1 tsp basil
1 ½ tsp Chili powder
¾ tsp ground cumin
tobasco to taste
16 oz can of piquito beans or whatever bean you like
15 1/2 oz can of chili beans
1 can stewed tomatoes or tomato sauce
cooked rice
grated cheddar cheese
1. brown ground beef and onions in skillet. Season with spices
2. Combine all ingredients except rice and cheese in slow cooker
3. Cover. Cook on low for 4 hours
4. Serve over a scoop of cooked rice and top with cheese
When I make this for the freezer, I put all chili ingredients in a ziploc bag and the cheese and rice in two sandwich sized ziploc bags and freeze together. This is really yummy
Cranberry Beef or Chicken Recipe
4 boneless, skinless chick breasts or 1 pot roast
8 oz Catalina dressing
1 pkg dry onion soup mix (I use golden onion)
1-1 lb can whole berry cranberry sauce
Mix together dressing, soup mix and cranberry sauce. Place chicken (or beef) and mixture together in a freezer bag. Freeze, using freezer bag method.
Makes 4 servings
To make:
Thaw completely. Place chicken (or beef) and sauce in greased baking dish. Bake at 350 for 1-1 1/2 hours uncovered.
(This is the baking instructions in the cook book but I just throw it in the crockpot on low for about 6 hours).
Crockpot Taco Chili
Crockpot Taco Chili
Serves 6
3/4 pound extra lean ground beef -- cooked and drained
1 package taco seasoning mix
2 cans Mexican-style stewed tomatoes -- Rotell is a
good brand
1 can black beans -- 15 oz, drained and rinsed
1 can corn -- 15 oz, drained
Make sure your beef is well drained and blotted (I use paper towels to
get up all the excess fat)
Mix all ingredients in a Ziploc bag. Freeze. Thaw completely.
Throw everything into a crockpot and cook for 6-8 hours on low or 2-4
hours on high (depending on the age, make and model of your
appliance--Your mileage may vary!).
Dripped Beef
3-4 lb chuck roast
1 tsp salt
1 tsp seasoned salt
1 tsp white pepper
1 Tbsp rosemary
1 Tbsp dried oregano
1 Tbsp garlic powder
1 cup water
Combine all ingredients and freeze in Ziploc bag. To serve: thaw completely and place in crockpot. Cover and cook low 6-7 hours. Shred meat using two forks. Strain liquid and return liquid and meat to crockpot. Serve meat and au jus over mashed potatoes, noodles or rice.
Makes 8 servings
Easy Crockpot Beef
3 lbs stewing beef, cubed
1 can cream of mushroom soup
7 oz jar mushrooms, undrained
½ cup red wine
1 envelope dry onion soup mix
Combine all ingredients and freeze in Ziploc bag. To serve: thaw completely and place in crockpot. Cover and cook on low 10 hours. Serve over noodles, rice or pasta.
Makes 8 servings

Peppery Roast
4 lb beef or venison roast
1 tsp garlic salt
1 tsp onion salt
2 tsp celery salt
1 ½ tsp salt
2 tsp Worcestershire sauce
2 tsp pepper
½ cup ketchup
1 Tbsp liquid smoke
3 Tbsp. brown sugar
1 Tbsp dry mustard
dash of nutmeg
1 Tbsp soy sauce
1 Tbsp lemon juice
3 drops hot pepper sauce
Combine all ingredients and freeze in Ziploc bag. To serve: thaw completely and place in crockpot. Cover and cook high 6-8 hours.
Makes 8-10 servings
Spanish Rice
2 lbs ground beef, browned
2 medium onions, chopped
2 green peppers, chopped
28 oz can tomatoes
8 oz can tomato sauce
1½ cup water
2½ tsp chili powder
2 tsp salt
2 tsp Worcestershire sauce
1½ cups rice, uncooked
Combine all ingredients and freeze in Ziploc bag. To serve: thaw completely and place in crockpot. Cover and cook low 8-10 hours.
Makes 8 servings
Cooker Chops
4 pork chops
1 can cream of mushroom soup
¼ cup ketchup
2 tsp Worcestershire sauce
Combine all ingredients in Ziploc bag and freeze. To serve: thaw completely and place in crockpot. Cover and cook on high 3-4 hours or low 8-10 hours.
**Variation: add one sliced onion to mixture.
Jambalya
1 large chopped onion
1 medium chopped green pepper
2 chopped celery stalks
3 cloves of garlic
28 oz diced tomatoes
2 c. chopped sausage
1 T. parsely
1/2 t. dried thyme
1/2 t. salt
1/2 t. pepper
1/4 t.red pepper sauce
3/4 lb. shrimp
Place in Ziploc Freezer Bag. Cook in crockpot. Serve over steamed rice.
***this is how the original recipe is written - I add some chopped chicken & some white wine. I also add the shrimp the last 30 minutes so it doesn't get tough***
Black Bean Chili
1 lb pork tenderloin cut into 1-inch chunks
16 oz jar salsa
3 15 oz cans black beans rinsed and drained
½ cup chicken broth
1 medium red bell pepper, chopped
1 medium onion, chopped
1 tsp. cumin
2-3 tsp chili powder
1-1½ tsp dried oregano
Combine all ingredients and freeze in Ziploc bag. To serve: thaw completely and place in crockpot. Cover and cook on low 6-8 hours or until pork is tender. Garnish individual servings with sour cream.
**This is also good over brown rice.
Broccoli-Cheese Soup
2 16 oz pkgs frozen chopped broccoli
2 cans cheddar cheese soup
2 12 oz cans evaporated milk
¼ cup finely chopped onion
½ tsp. seasoned salt
¼ tsp. pepper
Combine all ingredients and freeze in Ziploc bag. To serve: thaw completely and place in crockpot. Cover and cook on low 8-10 hours. Garnish with sunflower seeds and crumbled bacon if desired.
Cabbage Soup
Half a head of cabbage, sliced thin
2 ribs celery, sliced thin
2-3 carrots, sliced thin
1 onion, chopped
2 chicken bouillon cubes
2 garlic cloves, minced
1 quart tomato juice
1 tsp. salt
¼ tsp. pepper
Combine all ingredients and freeze in Ziploc bag. To serve: thaw completely and place in crockpot. Add water to within 3 inched of top of crockpot. Cover and cook on high 3 ½ - 4 hours or until vegetables are tender.
Chicken Tortilla Soup
4 chicken breast halves
2 15 oz can Mexican tomatoes ( or Rotel tomatoes)
1 cup salsa
4 oz can chopped green chilies
14 ½ oz can tomato sauce
Combine all ingredients and freeze in Ziploc Bag. To serve: thaw completely, place in crockpot, cover and cook on low 8 hours. Just before serving, remove chicken breasts and slice into bite size pieces. Stir into soup. To serve: put a handful of tortilla chips in bottom of a bowl and spoon soup over chips. Top with shredded cheese.
Bean Soup
1 lb. (2 cups) mixed dry beans, soaked overnight
1 lb. Italian sausage or kielbasa, sliced in 1 inch pieces
1 large onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
4 cloves garlic, minced
1 14oz. can diced tomatoes
1 8oz. can tomato sauce
¼ tsp. crushed red pepper flakes
2 bay leaves
¼ tsp. black pepper
2 Tbsp. Olive oil
2 cups water
6 cups chicken broth
In a stock pot, sauté onion and sausage in olive oil until sausage is lightly browned. Add garlic, red and green pepper. Saute an additional 2 minutes. Add remaining ingredients, bring to a boil, then simmer on low, covered, for 2 to 3 hours. Serve with Parmesan cheese and crusty Italian bread.
For Freezing: Cook as directed above, put in gallon Ziploc bags or other freezer-safe container and reheat as needed.
Or
Cook onion, sausage and garlic as above. Put meat mixture, peppers, seasonings, tomatoes and beans in Ziploc bags and freeze. To prepare, put frozen contents and liquid in stock pot or crock pot and cook until beans are tender.

Mexican Two Bean Chili
1 med zucchini - chopped
1 15 oz can black beans – rinsed
1 15 oz can pinto beans – rinsed
1 8.75 oz can corn – drained
2 14 oz cans chicken broth
1 16 oz jar salsa
1 8 oz can tomato sauce
2 12 oz cans shredded chicken (or three cups of cubed chicken)
1 clove garlic – chopped
1 ½ Tbsp chili powder
1 tsp cumin
Combine all ingredients and freeze. Thaw completely, place in large soup pot and bring to a boil. Simmer for 30 minutes.
White Beans and Chicken Chili
1 ½ lbs chicken, cooked and cubed/shredded
2 14 oz cans chicken broth
3 14 oz cans white northern beans
1 14 oz can white kidney beans
2 heaping tsp. cumin
2 heaping tsp oregano
2 tsp chili powder
1 tsp cayenne pepper
2 dashes hot sauce
2 Tbsp. chopped garlic
2 cups chopped onions
2 Tbsp oil
1 4oz can chopped green chilies
Saute garlic and onions in oil until tender. Add green chilies and sauté two more minutes. Combine all other ingredients. Freeze. To serve: thaw completely and simmer for one hour.
Can serve as is or over brown rice.
6 servings (as is)
8 servings (over rice)

Thanks so much! We're going of vacation in a few weeks and staying at a friend's cabin. I wanted to make all our food, but we'll be out most days and will have a minimal kitchen. The crockpot will be my friend!

Thanks for the recipe ideas! I'm going to try freezing them in 1qt. bags as to make single servings for myself and cook them in my mini-crockpot! If all goes as planned I can throw one bag in at breakfast and it will be ready for lunch
