preserving green oinons?

Hi everyone,

I was wondering if anyone knew if you could preserve green onions? My only thought was to slice and dry them, has anyone done this? I was thinking that then they could be used in making soups and stuff like that.

I've never tried before, but I know some people cut up herbs and freeze them with water in ice cube trays. Then you can add them to soups and stews. I suppose you could do the same thing with green onions. I have the same problem, because I'll have a recipe that calls for two, and then the rest of the bunch goes bad!

I would try drying them like herbs. They are so cheap (50 cents or less a bunch) I don't worry about wasting them. But you can add green onion to nearly anything. It's great in rice, in casseroles, all kinds of soup, or just as a garnish.
