    Ok,

    I canned 83 quarts of green beans and 7 quarts of tomatoes and okra. I froze 15 quarts of green beans and 7 quarts of tomatoes for my family.

    I canned 42 quarts of green beans for my mil.

    I helped freeze 91 quarts of green beans and 14 quarts of tomatoes for my mom. Would have done more but she didn't want anymore. Go figure?

    I would love to can pepper jelly, buy I don't have a tried and true recipe. Anyone???

    This is my first year canning and I ABSOLUTELY LOVE IT!!!!

    One good year is all it takes to be hooked for life. I have never done pepper jelly so I can't recommend a recipe. Here is the Ball website. Maybe they have one. http://www.freshpreserving.com/

    We canned eight pints of tomatoes today. I have said it before and will say it again, this should be the last of them.

    Today (even if was 2:00 a..m) I canned 14 pints of chicken
    and 12 half pints of chicken broth

    I've got enough broth left to do 12 more pints....I got my moneys worth from this 25 lbs of chicken I bought.

    Wow! That sounds great! How did you do the chicken and broth? What do you do with it when you use it? Do you have to heat it up or use straight from the jar?

    I got a home water canning set for Christmas a few years ago and just broke it out yesterday to try for the first time.

    I made 4 jars of Strawberry Lemonade Jam. My kids have already gone through half a jar!!


    I think I may be addicted! Our local market is having a good sale on peaches this week and my mind is swirling with all of the goodies I can can!!!

    Today I canned:

    3 jars pickles...not sure what kind they will be....my 'mad chemist' kind

    6 jars banana pecan butter....made will almonds and walnuts because that is what was open.

    Also....don't have to 'can' it but put some 'lemon pepper vinegar' to seasoning.
    Travel light. The baggage of the past can only hold you back.

    I canned-

    10 quarts of chicken broth
    13 quarts of chili
    13 quarts of bean and bacon soup

    I kinda got behind with all the canning I was doing since everything came at once. Here's what I have in addition to the above:

    18 quarts spaghetti sauce
    18 oints of tomato soup
    70 pints of green beans
    12 pints of assorted mixed veggies, i used lefover veggies when there wasn't
    enough for a canner
    10 pints of green beans and mushrooms
    I also froze 20 pint bags of corn, a bushel of corn on the cob with husks on and
    and so far 3 meals of frozen home made noodles.I still want to do some beef broth too but have to wait for the part of a beef we're getting and deer season will be here soon. My neighbor wondered if we were going hibernate (sp) this winter.

    I'm not nearly as industrious as some of you but this weekend I canned 7 quarts chili, 5 half pints of jalapeno jelly and 2 pints of pickled jalapeno rings (think nachos).

    I have more jalapenos that were given to me, I plan to make another batch of the jelly for gifts this christmas.

    The people that work with my Dh think we are crazy for doing all this. They don't believe how much it can save you. My chicken broth cost me under a dollar for the ingredients and no mre than cooking the chicken in the oven for a meal. Funny, one of the guys he works with eats things we have canned and raves about them. He even wanted the recipe for tomato soup. Go figure.
