    Default drying/ dehydrating bell peppers

    Any tips? What is a good size to cut them to? I'm thinking maybe strips... though I'd really like 1/4" dice...

    I just do them in strips. Then if I want diced, I cut the dried peppers up and then rehydrate. Why go thru all the cutting now? Do it when you need it

    I have done strips and rings. The rings are from baby red, yellow and orange peppers. They look so cute when they are done. The strips are nice too.

    I do strips and will snip them with clean kitchen scissors if I need them in smaller bits for my homemade soup mixes after they are dehydrated.

    You can dehydrate peppers in halves, rings, strips, or coarsely chopped. Whatever method you use, try to keep the pieces close to the same size as possible so they dehydrate in approximately the same amount of time. Or place rings on one drying rack, strips on another, and coarsely chopped on yet another, etc., so you have all your bases covered.

    I never really thought about drying peppers. I am going to try this with the ones I harvest this weekend.

    Thanks for the tips. I cut them in strips and put them on the sheet next to the tomatoes I'm drying and they seem to be doing just fine. Will be nice to have them to add to things this winter.
