Dehydrating celery
I use this a lot in soups my dh loves celery and it is great to have on hand when you don't have fresth available.

That's how I did mine! I don't remember where I found the instructions. Half I left chopped up and dried. The other half AFTER chopping and drying, I put in the food processor (blender will work too) and made celery powder.

I'm thinking I should get a dehydrator. Celery is one of those things I have a hard time using up before it goes soggy. I still have to try the trick of wrapping it entirely in foil to see if it'll last longer. Anyone try that & does it work?

I dry and store the leaves separately from sliced stalks so I can use them more as an herb in dishes.

I use the food processor to cut mine up. way faster that way. in soups it really comes back nice, you can't tell the difference.

Thanks for the post jas.
I love my dried celery. But like Ceashels, I keep my leaves separate---------usually freeze them.
I hope to get lots more done this year.
