    Default These started the day as 31 ears of corn... :)

    Hubby came home from the produce stand with a ton of corn at 7 for .99 cents. I saw it and my heart dropped. I didn't WANT to freeze corn, but what a great deal, ya know? This is the "fruit of my labour". My boys shucked it - so that was the hard part, as far as I'm concerned. When we lived in Iowa, friends taught me how to do this.
    My crazy method:
    Shuck the corn
    get out the electric knife and bundt pan (I use this pan only for this!)
    take the corn and stand it up on the hole in the bundt pan
    cut it off with the electric knife and let it fall into pan
    when the pan is full, dump into stockpot
    when stockpot is full, cover the corn with water
    add a bit of sugar
    heat till it boils
    turn off heat as soon as it boils and let it cool
    put in freezer bags
    enjoy the summer in the middle of winter

    Good job! You will be loving that you have this in the freezer come late fall/winter and you can just use what you have vs overpaying for out of season corn I wish I could freeze veggies but dad isn't into that. As soon as I freeze it, he'll be cooking with it the next day (though I do have shredded zuc hiding in the freezer )

    We just bought corn the other day at 7/$100 too! It was mighty delish!

    I actually have no idea All I know is that is how my Iowa friends who have been doing this forever told me to do it. I figure, no one knows how to freeze up sweet corn quite like Iowans.

    Yep, I would listen to the Iowans when it comes to corn too.

    I think the sugar may help keep the colour vibrant for after you defrost it and cook it? Or help it to keep the sweetness?

    Could be, Libby. I've just never heard of sugar in the boiling water before. It makes sense.

    Adding sugar to corn was in the really old BHG cookbook and the way I always cook it. Cannot imagine prices that low - congrats everyone!!

    A few weeks ago we found corn 10 for a dollar. I think I ate corn cooked just about any way you could think of. Enjoy your corn

    Good job

    Hubby's boss grows a patch of sweet corn every year, and mentioned it was going to go to waste if someone did not pick it. We took the cousin and went to pick some last evening. Got about 2 bushels for each household. I did manage to get 8 bags of 2 cups each in the freezer today. Got a lot more to work on tomorrow. The chickens are sure enjoying the leftovers.
    I think he said there was another variety to ripen yet.

    Did you drain the liquid before putting into freezer bags? Sorry, never done this, but sounds wonderful.
