My cooking plans for the coming week (ish)
My father in law was killed earlier this month in a boating accident while fishing. Naturally my mother in law (and the rest of our family) is devastated. We went down last week for the funeral/services and while there, I worked with my sister in law to put together 20 or so individual 1-2 serving meals in MIL's freezer. My husband will be going back down there again at the end of this month.
During this weekend and the coming week, I want to pressure can several batches of soup for us and my mother in law. Here's my plan, though amounts are somewhat guestimates from the recipes and subject to change:
Split Pea Soup
Expecting to can 2 pints for me and 4 pints for MIL (neither MIL nor I have had split pea soup and don't know if we like it)
Beef Barley Soup
Expecting to can 5 quarts/4 pints for me and 8 pints for MIL
Vegetable Sausage Soup
Expecting to can 3 quarts/3 pints for me and 6 pints for MIL
Thick Beef Vegetable Soup
Expecting to can 5 quarts/6 pints for me and 8 pints for MIL
Chicken Soup
Expecting to can 3 quarts/2 pints for me and 4 pints for MIL
Ham and Bean Soup
Expecting to can 6 quarts/6 pints for me and 6 pints for MIL
Total approximate output:
59 pints
22 quarts
This will be great to have on hand for lunches, especially for hubby, and quick suppers.
This will make 36 pints of meals for MIL (3 cases), which should help tide her over nicely and be super easy to prepare in the coming weeks.

That is very nice of you to do for your mil. bet she will appreciate the food and it all read prepared.

I'm so sorry to hear about your loss! God bless you all. I'm sure you MIL appreciates all that you are doing for her, it is very thoughtful of you.

What a wonderful project for you to do for your MIL and yourself - this much cooking will be a sort of catharsis for you too as you go through the process. What a terrible loss for the everyone in the family, sending prayers, hugs and aloha to you all.
