CJ, should I seal it by turning it upside down instead of the water bath ??????????

Lori, no. I would still do the water bath method, it actually is the only safe method. I use to put wax on mine, but I found more and more the jars didn't seal and I'd get mold. You don't want your jam to end up with mold.
Do your water bath, but adjust is accordingly. I know I have to do mine for 10 minutes, but altitude plays a big part. See if you can find how long you should do the water bath.
Here is the information I have:
1,001 - 3000 feet, 5 minutes
3001 - 6000 feet, 10 minutes
6001- 8000 feet, 15 minutes
8008 - 10,000 feet 20 minutes
In the Blue Ribbon Preserves book, for jams and jellies, here is the info.
4 - oz jars 10 minutes
Half-pint jars 10 minutes
Pint jars - 15 minutes
So what I did was take off 5 minutes because I found no matter what jam/jelly I made it wouldn't completely set. We've gotten use to that type of jam/jelly now though, not quite as thick.
I don't have a clue as to what altitude you are, but it does play a huge part.
HTH (Personally, if it was me I'd do it 10 minutes in water bath and then leave it. It will set, but not thick, if its like any jam/jelly recipe I've done.)

I saw this thread a while back and had to try. I made the Dr.Pepper jelly using the inversion method with great success. Mine set up within 24 hrs. Can I use other soda with an even exchange? Say an orange flavored one? I don't use sugar much any more and have a fair amt. to get rid of. My kids do like a pbj so I thought this would be a good way to get rid of the sugar I have. I also thought it would be a "cool" gift to have on hand. Thanks for the recipe!

I got some Dr. Pepper Jelly for a gift a while back and it wasn't firm like store bought grape/etc type, but it was oooh so yummy! It was easier to spread that way I think.
Lori how did your BIL (or brother?) like the Pepsi jelly?
