Oven Fried Chicken Chimichangas

    Default Oven Fried Chicken Chimichangas

    Makes 4 servings

    I like to make up a bunch of these at one time and have in the freezer.


    2/3 c. picante sauce
    1 t. ground cumin
    1-1/2 c. chopped or shredded cooked chicken
    1 c. shredded mild cheddar cheese
    6 flour tortillas (8")
    butter flavor non-stick cooking spray

    garnish with: (if desired)
    grated cheese
    diced green onion
    lite sour cream

    Mix picante sauce, cumin, chicken, & cheese.
    Place about 1/2 c. chicken mixture in center of each tortilla. Fold opposite sides over filling. Roll up from bottom & place seam-side down on baking sheet that has been sprayed with non-stick cooking spray.
    Spray the chimichaga with butter flavored cooking spray.

    Bake at 400 for 25 min. or until golden.
    Garnish with cheese, green onion & sour cream. if desired.
    Serve with additional picante sauce.

    I'm glad you liked them. I like to make a bunch of these and freeze them for busy nights, just take as many as you need out of the freezer and bake in a toaster oven. You can also microwave them but I like mine crisper.
