Basic pasta
1)In a mixing bowl mix 2 cups flour and the salt
2)Push the mixture to the edges of the bowl, making a well in the center
3)In another mixing bowl combines beaten eggs, water and oil
4) Stir egg mixture into the flour all at once, mixing til the dry and liquid are well combined
5) Sprinkle the kneading surface with the remaining 1/3 cup flour. Turn dough out onto the floured surface.
6) knead til the sough is smooth and elastic ( 8 to 10 mins) cover and let rest 10 mins.
To form the noddles roll out the dough. when it is rolled out to the thickness you want your noddles,roll up jelly roll style. Use thread to cut the dough. Place thread under the dough the width you want your noddles. cross the thread over the dough and pull. The loop will cut the noodles.
Unroll your noodle and set aside. Repeat until all your dough is used up You can cook now or you can let them dry for a day.
