Recipe DescriptionDon't let the name put you off - this is a delicious recipe, no one will guess that it is healthy, too. Evaporated milk is such a great ingredient - it gives the "mouth feel" of cream without the calorie count. From food.com by MrsSPheonixPreparation Steps:Level of Difficulty:EasyTime Needed:Ingredients:olive oil flavored cooking sprayServes:
10 oz fusilli
1 small onion , finely chopped
3 garlic cloves , finely sliced
1 lemon, juice and zest of
3/4 cup reduced-sodium chicken broth
1 7 oz can evaporated milk
1 15 oz can tuna in water , drained, flaked
salt and pepper
1/4 cup fresh parsley , chopped
1 tablespoon Parmesan cheese
1 tablespoon capers (optional)4 servingsDirections:Cook pasta to al dente, then drain and set aside.
Heat pan over medium heat and spray with olive oil.
Cook onion for three minutes or until tender then add garlic and cook for 1 minute or until just starting to color.
Increase heat to high and add lemon juice, zest and stock and simmer for 3 minutes. Stir in the evaporated milk and flaked tuna then cook for another 2 minutes. Season well with salt and pepper as desired (lots of pepper no salt for us).
Add pasta and parsley to the pan and fold pasta and sauce together gently to combine. Heat just a couple of minutes until heated through.
Serve hot in warm bowls topped with either the parmesan as the recipe suggests, or as we did with capers instead as they go wonderfully well with tuna, and save you a few calories.

This does sound good...........and while I am NOT a fan of cooked tuna (think it is the smell) I might try it with cold tuna on top. I think it would still be good...........
(think the cooked tuna smell comes from when I was pregnant.........made me really sick to SMELL IT and that is about all we could afford..--back when tuna was cheap!!.........YUK!!) I still like tuna sandwiches.Travel light. The baggage of the past can only hold you back.

I think it would be good with salmon, too, if tuna puts you off. I think I learned to like cooked canned tuna in college, where we used to get these grilled tuna english muffin things at the grill in the basement of the dorm I lived in, open only at night. I have a couple of recipes that I think turn out well, but it's not something I naturally think of, either.
