Impossible Coconut Pie
1. I melted butter in large-enuff microwave bowl
2. Added everything else to bowl, eggs being last
3. I used a hand mixer..clean off beaters after mixing..
Bake till golden brown or knife in center comes out clean..
Refrig leftovers..
ps..I sprinkled nutmeg on top before baking. Just 'cuz I like it!Ali

It's good, but it's actually more like a custard than a pie. We thought it was best served warm.

Impossibly Easy pies are best baked in cast iron.
