Pumpkin Bread (just in time for October & Fall!)
Pumpkin Bread (From Taste of Oregon via my neighbor in Va.)
3 eggs
3 1/2 cups sugar
1 30 oz. can pumpkin
1 cup oil
5 cups flour
1 tsp. cinnamon
1 tsp. allspice
1 tsp. ground cloves
1/2 tsp. nutmeg
1 1/2 tsp. salt
4 tsp. baking soda
Cream together eggs, sugar, pumpkin, and oil. Sift dry ingredients together (I just mix 'em), then add into pumpkin mixture. Mix well (you'll need the largest bowl in your house!)
Bake 350 fro 60-70 min in 3 greased and floured loaf pans. (check baking time as everyone's oven's vary)

I love pumpkin bread. I made some last week, and my kids preferred it to the chocolate cranberry bread that I made at the same time. Plus it makes the house smell so good while it's baking.

I love the smell of pumpkin bread when it baking. Sometimes for a change I will add chocolate chips.

OOOHHH!! This sounds wonderful! I knew I was saving all those cans of pumpkin for SOMETHING
The chocolate chips sound like a great addition. Any other ideas of things to add besides nuts? My DH can't eat them.

It makes a ton too! LOL. It's a frugal recipe w/ the added benefit of having bread and a veggie serving all in one

We have way too much canned pumpkin in the house.
