Yeah oiling it will prevent cracking. The cracking is due to the wood cells shrinking from being dry. Oil feeds the wood, I always think of it like this if it used to be alive then it still needs to be fed.

Re the contamination thing: I have two cutting boards: wood for veggies and such and corian (it was a scrap) that we use for meats. The corian board doesn't stay out and gets washed in steaming hot water and soap each time it's used. The wooden board is used almost every day, wiped off with a damp, soapy sponge and that's it. I've never oiled it. DH might have, but I don't know.

I use wooden spoons all the time. Do they look like new? No. They live in a pitcher and you only see the handles anyway. I've had some of these since before we moved to the east coast, 21 years ago.
