    Default Any ideas on using up corn tortillas?

    I have a few packages of corn tortillas that have been "giving" to me.

    I have used them to make enchiladas.

    Any other ideas on what I can do with them? Besides fry them up and make corn chips.

    Last batch we had I cut into smaller pices and deep fried for chips. Yum
    ~July 19 saving goal for event $104/$1000

    Tortilla Skillet

    12 corn or flour tortillas
    1/2 cup oil
    1/2 cup chopped green onion
    1 can (15 oz) whole tomatoes, drained
    1/2 tsp oregano
    1/2 tsp salt
    1/8 tsp pepper
    1 cup shredded cheddar cheese

    Prepare tortillas and cut into thin strips. Heat in 10-inch skillet until hot. Cook tortillas and onions, turning occasionally, until tortillas are crisp (about 10 min). Stir in tomatoes, oregano, salt & pepper. Sprinkle with cheese and heat just until cheese is melted. Serve with sour cream if desired.

    NOTES:

    I don't use that much oil. I use just a regular onion. I don't drain the tomatoes and I used diced instead of whole. I add in a can of olives that I sliced up. I also add in a dash or two of garlic and chili powder. I also don't cook the tortillas until they are as crispy because of my jaw (TMJ).

    This is also good with some leftover chicken in it.

    LOL I re-aread and just saw you said besides make corn chips. Opps sorry!

    Mine turn out Greasy Do yours? If not how do you do it?

    Cut them in strips for tortilla soup. (chicken soup with veg and hot sauce)

    Use them for tacos, crispy or not.

    Freeze them for later.

    Do you just put the strips in the soup?

    How do you make crispy taco shells?

    I use mine for...
    totilla soup (just make a mexican style, chicken soup-tear up stips in bowl before spooning soup in)
    soft tacos
    taquitos
    maybe cut into strips, deep fry, then sprinkle with cinnamon and sugar

    I just deep fry them in very hot oil and lay on paper towels. I think the trick is to make sure the oil is hot enough.

    I like using them for breakfast. Breakfast tacos. I scramble some eggs with onion and bell pepper, then make some bacon - roll them up in a tortilla - maybe add some cheese. YUMMY

    1. freeze them

    2. hot ungreased griddle, cook on both sides, dot of butter, serve like bread. good!

    3. tacos (cook them first)
    11% gross to retirement
    10% takehome to tithe and offerings
    emergency fund maintained at 3000(works for me)
    credit card debt 7500
    mortgage free
    freedom accounts/sinking funds that ebb and flow
    then live on the rest!

    i am trying something new. LDS church advises savings or debt repayment should be the same as the tithe. 10% each.

    Call me crazy, but I don't fry anything! I just cut up my tortillas with a pizza cutter and put them on a nonstick cookie sheet and bake for a few minutes in the oven! Chips without all the extra fat or grease!
