Crock Pot Chicken question...
First of all I'm sorry if this is too long and I'm sorry if I am posting this in the wrong place.

I have made the Campbells recipe for CHeesy chicken and rice casserole in the oven before and it comes out good. I got a Crock Pot for christmas and I'm dieing to use it. I want to make the Cheesy chicken and rice casserole in my crock pot but am having trouble getting a good recipe. Also i want to make it without rice. Can anyone suggest something or are there any good sites? Here are my ingredients that I have on hand (can't go to the store cause the storm here is insane).
boneless, skinless chicken breast, cream of chicken soup, veggies, sharp cheddar cheese, seasons, cream cheese, milk, chicken broth.
I don't have cheddar cheese soup which i have seen in most recipes. Thanks for all the help. This site is great!Chele

Blend the soup, cream cheese, spices 1/2 cup of milk and 1/2 cup of broth. Place chicken in the crock. Add veggies. (I'd go with Broccoli myself) and pour soup mixture over it. Mixture should be somewhat thick.
Cook on High until chicken is done temp at 165*
Crock pots tend to prevent evaporation so you do not want to have too much liquid. Make sure you have enough in the pot to make it at least half full. Check the food every couple of hours and add more broth if it seems to be too thick.
I think for the first time I would not make this to cook while I was not home for more than a couple of hours.

Glad to hear it worked. I love my crock pot but I made the mistake of getting a big one. too big for a single girl most days so I need to go buy a smaller one for everyday meals.
I love making chili, roasts and soups in mine.
Another favorite is to get a whole chicken. You don't even have to have it thawed all the way. Just remove the gizzards. rub inside and out with:
Salt, pepper and rubbed sage.
Put in the crock on med/high for abut 4-5 hours. Do not add any water. The chicken juices will make a broth that you can save for soup or gravy after you get the meat out. The meat falls right off the bones and it's soooo yummy!

I was lucky and got a Hamilton Beach 3-in-1 Crock Pot that has 3 pots in 2 qt, 4 qt and 6qt. It's wonderful.

A YEAR OF CROCKPOTTING.
A lady used her CP every day last year, she posted the recipes, posted pics and even what her family thought about the meal.
