It makes a wonderful stretcher in meat loaf. Also, grind it into flour and use it partly in breads, pancakes, etc. Don't use just the oatmeal flour by itself. I have not tried this next tip, but have read it several times: use the ground oatmeal as a facial mask. Add a half cup or so to cake mixes (and add a little extra liquid), to give the cake good texture.
Not sure how you are storing your oatmeal, but placing it into glass canning jars with a bay leaf, and putting on the screw top type of lid can preserve your dry oatmeal for a long time.Spiritual:

Here's a recipe I use to use up any stale cereal.
GARBAGE COOKIES
1 c. shortening
2 eggs, beaten
½ t. baking powder
1 t. soda
1 c. rice krispies
1 c. oatmeal
2 c. plain flour
1 c. brown sugar
1 c. white sugar
1 c. coconut
1 c. pecans
1 t. vanilla
dash salt
This recipe is designed to change the ingredients according to what you have on hand. Of course, coconut and pecans can be expensive. The cereal, coconut and pecans are all interchangeable. In other words, you can use 4 cups of cereal and no pecans or coconut.
Cream shortening and sugars; add eggs. Add flour, soda and baking powder. Mix in cereals, coconut, pecans, salt and vanilla. Drop from a spoon onto a greased cookie sheet and bake at 325 degrees for approximately 6-8 minutes until lightly brown.

I've not tried it, but have heard that oatmeal can make nice bird stuffing (ie. chicken, turkey).
I've also wanted to try grinding it and using it to roll meat or veggie cutlets.
a take off on one of the previous posts - it is also a good binder for veggie burgers (black bean burgers - yum!)

-to stretch meatloaf or homemade burgers
You can also make oatmeal bread.

Chocolate no-bake cookies are my personal favorite. You can also make some great oatmeal raisin cookies with it too.

I mix Muesli up in a storage contain with pumpkins seeds, rolled wheat , cinnamon and whatever dried fruit or other goodies I have on hand. When it's breakfast time I pour it into small bowl and pour apple juice or kefir over it and let it soak for 30 minutes before consuming. Yum! I also using it in meatloaf or meatballs and grind it into flour (makes fantastic scones and pancakes) due to the low gluten content.

There's a really good granola bar recipe on here somewhere. Called Deliciously Frugal Granola Bars if you do a search. They take 4 1/2 cups of oatmeal per pan and I guarantee you they will go fast!
“When you get to the end of all the light you know
and it's time to step into the darkness of the unknown,
faith is knowing that one of two things will happen:
you will be given something solid to stand on,
or you will be taught how to fly.” - Edward Teller
“Our Earth is degenerate in these later days;
there are signs that the world is speedily
coming to an end;
bribery and corruption are common; children no
longer obey their parents;
every man wants to write a book and the
end of the world is evidently approaching.”
— From a translation of an inscription on
an Assyrian clay tablet, circa 2800 B.C.E.
God, grant me the serenity to accept the things I cannot change,
courage to change the things I can,
and the wisdom to know the difference.

oatmeal chocolate chip cookies
granola
and something I tried recently, when I was making peanut clusters but ran out of peanuts (already had the chocolate melted):
peanut/coconut/oatmeal clusters -- they were really good. I keep them in the fridge (or freezer) so they last longer (not just keeping them from melting, but keeping me from eating them up too fast).

I grind it and add to flour in my baking, gives it a bit of a neater texture and bit more filling.

I love the meatloaf idea that you all have. I have never tried that before.
I would use it for homemade granola or granola bars. I also love granola on top of yogurt. I know that it doesn't use up a lot, but it is at least something!
