I've never heard of freezing it. For flavor, rosemary would be nice. When you spread it you could sprinkle a little Parmesan cheese on it. Rosemary/Parmesan is always tasty. Maybe some basil too? I would think any herb that would like would be fine.

Olive oil solidifies in the fridge. You don't have to freeze it. It will liquify in a short time, though, it doesn't stay solid like butter or margarine.
You could put any herbs you like into it to make a spread. I would be careful with rosemary, because you really don't want to chew it, it's like eating sticks.Use it up, Wear it out,
Make it do, Or do without. ~unknown

Actually, I thought of that with the rosemary after I posted, but when I bought bulk herbs last time I got some rosemary powder that I'm really enjoying using when I want to avoid the crunchy effect. I guess I was thinking of that.

okay...so i did it...i froze the oilve oil.. i put it in a little container (don't want to waste this stuff if it doesn't work out)...i added garlic powder and basil...just a pinch of both....and put the lid on and threw it in.... next morning i put it in the fridge.... later in the day i checked it out and here's what i found...
it now has the consistancy of ...uh....vaseline...(okay-okay....it's the only think i could think of at the moment) it's not runny but its not too hard....so i tasted it and it's not half bad....dh had some on his toast tonight coz i ran out of butter and didn't want to get any and he didn't say anything...(and believe me...that's the same thing as saying this is okay..coz if i had said..."look honey...i froze olive oil and then thawed it and now you are eating it"...he would have said...'oh-this is soooo gross...i can't eat this....don't do this anymore....stop being so darn frugal.... i hate this frugal stuff....can we turn up the heat now"?????
so i kept quiet....
