Freezing?
I think it would be alright, but just seeing what you guys think.
How do you think Pancakes would go being frozen then defrosted before eating again?

Cooking pancakes and then freezing and then defrosting works great. It's a great time saver, make a huge batch and freeze them. Defrost as needed.

I do it all the time; works just like Eggo's. lol! You can either warm them up in the microwave or the toaster.

I do it all the time also. I wrap a serving size in plastic wrap, put all the servings into a bread bag, and freeze. Makes for a very easy breakfast on school mornings.

I would love to have frozen pancakes but my guys always scarf them all down before I can freeze them.

I do waffles, pancakes and french toast sticks 100-120 at a time, let them cool a bit and then bag them in 2's and freeze them, it works awesome for us!!

We love "used" (as hubby calls them) - frozen -pancakes/waffles/crumpets/French toast reheated on a griddle, as another option. I can reheat more at once on my stove-top griddle/s, or large electric griddle, than in the toaster or toaster oven. They are a little on the "crispy" side, which we like. Just keep the heat on low or low-medium. You're just warming, not cooking, them.
I quick-freeze them on a cookie sheet, THEN store them stacked in the freezer with sheets of parchment paper (cut to size) between them to keep them from sticking together.

When my kids were growing up I would make pancakes about the same size as the ones you buy at the store and freeze them for up to 3 months. I would put a piece of waxed paper in between each pancake and freeze 8 in a package (2 per kid). If you use the microwave to reheat them just make sure to put a paper towel underneath the bottom pancake & make sure you separate them...don't nuke the waxed paper.
