Freezing again?
Not too sure about this one, but have accidentally defrosted too much Chicken Breast, and am wondering if I cook it, and refreeze it, will it keep for another night?

It can refrozen again safely if you cook it first. Don't defrost then refreeze without cooking.

Raw chicken can safely be refrozen if there are still ice crystals in the meat. If it is completely thawed, cook it, package it & freeze it the same as you would any other prepared food.

It can be refrozen. Most meats in the supermarket that are sold fresh, were often frozen first. I've gotten home, gone to repackage and things are still crystallized in the center. It's myth that you can only freeze once as raw, then once as cooked. As per local butchers who supply the markets.

According to the USDA Food Safety and Inspection Service website, you can refreeze thawed meat (it doesn't have to be partially frozen still).
Once food is thawed in the refrigerator, it is safe to refreeze it without cooking, although there may be a loss of quality due to the moisture lost through defrosting. After cooking raw foods which were previously frozen, it is safe to freeze the cooked foods. If previously cooked foods are thawed in the refrigerator, you may refreeze the unused portion.
If you purchase previously frozen meat, poultry or fish at a retail store, you can refreeze if it has been handled properly.
