    Default Can you make a meal from these leftovers?

    I have leftover sloppy joe meat. I have quite a bit leftover, I didn't realize I made so much. I'm in need of a leftover makeover! TIA!

    I would just add it to chili or spaghetti. You could serve it as 'Cincinnati chili' over spaghetti with cheese on top. Last option, freeze it and pull it out the next time you want sloppy joes.

    Spread leftover Sloppy Joe meat in a casserole dish. Place sliced process cheese over the meat and top the cheese with homemade or refrigerator biscuits. Bake until the biscuits are done.

    Serve as an alternative taco filling. Simply warm and serve inside corn or flour tortillas. This is particularly helpful when you have only a cup or two leftover, since that amount is enough to make several tacos for a subsequent meal.

    Prepare hash browns, add diced onions and green peppers and cook until tender. Stir in sloppy joe mixture and heat through. Sprinkle with a little cheddar cheese before serving.

    Shepherdess Pie

    Ingredients:
    1 lb of prepared sloppy joe meat mixture
    2 cups of mashed potatoes
    1 can of corn or peas (optional)*
    1 cup of shredded cheddar cheese

    Directions: Spread sloppy joe mixture in bottom of casserole dish. Pour vegetables over meat and distribute evenly. Spread mashed potatoes over the top, spreading evenly and making sure potatoes completely cover the top and touch the sides of the dish (this will be your "crust"). Bake at 375 degrees for 20 minutes, or until potatoes are set and slightly brown. Sprinkle cheese over top. Cook 2-3 minutes longer until melted. Serve with warm biscuits and a side salad.

    Make a soup of of it with veggies. I'd add in some sautéed onions for sure, maybe some pasta or rice, carrots, celery...

    My ideas were about the same as above!

    Add to chili or spaghetti.

    Put into a casserole dish and I was thinking about covering it with cornbread mix, then cooking according to cornbread directions.

    My mom used to put sloppy joe on an English muffin and cover with cheese, then broil til the cheese melted. I've always like it that way!

    BTDT and when I added it to chili it tasted like sloppy joe chili.

    DS#2 likes sloppy joe spaghetti. Just add a little tomato sauce and use some type of pasta noodle.

    Or....put sloppy joe in the bottom of a casserole dish, and mix up bisquik and pour over the sloppy joe. It's like an upside down sloppy joe.~you can always add corn or some type of other veggie on top of it before you add the bisquik mix.

    I'd add some cumin to it and make it into taco's with all the fixings.

    My first choice would be just freeze it. You'll be ready for sloppy Joes again in a couple of weeks.

    Make mini pizza. Bagel,sloppy joe meat,cheese. Anything else you like on pizza. Two minutes in broiler in meat is warm.

    My first thought was a biscuit pinwheel. make up a large batch of biscuit dough and roll out into a rectangle. cover with a layer of sloppy joe mixture and start on one end and roll up into a pin wheel and bake on a cookie sheet till golden. but i'm totally loving the shepards pie idea, sounds yummy!

    If it was me, I'd also try a version of Shepherd's Pie. Maybe do an Italian style, adding a can of tomato soup and some italian herbs. Play with it Then a layer of veggies, and lastly some cheesey potatoes. How bad could it be?

    I have tried most of these ideas and they all work great. Just remember to add some different spices if you want to hide that "sweet" sloppy joe flavor.

    Use it to top baked potatoes, as filling for tortillas with cheese, or for my boys, I just leave it and they heat it up to make single server sandwiches when they get off work.
