    Default Brown Rice

    Why does brown rice foam so much when it cooks? Even in a big pot it always goes over for me. Is there a trick to cooking it?

    It's a basic law of nature: brown rice always boils over! It doesn't matter what you do, it can't be avoided.

    Don't boil it. It never comes out right. Bake it. Once you try this recipe you will never go back to stovetop:

    I like to cook mine in broth instead of plain water. It also makes an excellent pilaf if you add chopped vegetables or nuts.

    I don't know why.

    One thing I do is make sure the lid is on tight. You can wrap alumium foil onto the lid then press down on pot. This seems to help keep steam from escaping.

    As soon as the water starts to boil, add the rice stir once and cover pot. IMMEDIATELY lower the heat to simmer. For some reason if I let the rice boil then cover the pot the rice and water "is too hot" and everything starts to boil over. If things do boil over remove the pot from the burner. Let the pot cool off a little and make sure the burner is set to simmer. Then place pot back on the burner.

    One of the burners on my stove is a little smaller than the other 3. I use that one when I am making brown rice. I don't let it boil (or just barely boil). Then I turn down the flame to the lowest with the cover on the pot. I let it simmer like that for 45 minutes. Works for me every time.

    I rinse my rice multiple times with cold water before cooking and that seems to help.
