Any good toppings for fish
I am making flounder for dinner and I want to put something on top. Not just plain.
Any suggestions? I have cod and Mahi too. Could cook any of them.

Basic fish topping is seasoned breadcrumbs and butter. You bake the fish and the topping gets crunchy. It is a perfect compliment to the soft fish.
You can also use finely chopped or ground nuts, like pecans or macadamia, with the breadcrumbs.
A 50/50 mix of mayo and mustard is good on strong fish like salmon or swordfish. Slather the fish and then bake.
Lemon and herb butter (tarragon, thyme, parsley) is good on white fish.Use it up, Wear it out,

With Bluefish or any meaty fish try scoring the flesh a little. Top with a mixture of chopped scallions, diced tomatos, fresh minced garlic and any herbs that you like. Sprinkle with olive oil and lemon. Bake in oven until fish flakes. I used to make it in aluminum pouches, but you could probably make it in a covered dish and take the lid off for last 10-15 minutes.

When I make white fish, I usually put it in a casserole with a small pat of butter, some lemon pepper, and a cut up onion. Then I bake it like that. Mind you my fish isn't fresh, its the frozen HighLiner ones you buy that are shaped in a brick.

wow thanks guys for all the tasty suggestions! We are eating more fish these days and I have to come up with lots of ideas. I have some good dill sauce recipes for salmon, but need as many ideas as I can get.

I use mustard (salt/papper) and breadcrumb paste on top
and a little bacon grease to fry it in!

I got fish at Perkins yesterday that had pineapple salsa and teriyaki sauce on it. . . very good!

I put some butter in a sauce pan, melt it, add some fresh lemon juice, garlic powder, a few shakes Worcestershire sauce, a few shakes of italian seasoning, and let it simmer a few minutes. Baste my fish with it while its baking.

My favorite is to lightly coat the fish with seasoned flour and sautee it in a pan with some butter, when it's done, take it out and add a bit more butter to the pan and then a bit of sherry, scraping all of the good stuff from the bottom, I then put a some chopped nuts in the butter and then pour it all over the top. Sauteed fish with a pecan sherry butter sauce, it's yummy.

there are so many ways to do fish.
depending on what we all fancy eating I would cook the fish take it off the bone mix with mash potatoes, dip in egg then breadcrumbs for fishcakes,
cook the fish and place on a bed of savoury rice.
fry some onions and peppers, garlic, oregano and basil then add in chopped tomates let it simmer for a couple of minutes and pour over the fish.
dice the fish and put it in stock along with spring onions, sliced cabbage, red peppers and grated potatoes to thicken it and let it boil down for a real nicely flavoured stew.
get some prawns, clams and mussels(precooked) to go with whatever fish , use what ever veg you have to hand, put it in one pot with rice and let the rice cook with all the ingredients being mixed through and for the flavour to get in the rice, once the rice is cooked that is the dish ready

I like to take a ripe mango and a green mango (off the tree out side) dice them up with some red onion and fresh garlic dice it all together squeeze some lemon over it and let it sit in fridge to let the flavours get together and then serve it over the broiled fish. I cant fry anything to save my life so this is how I cook fish.

mix mayo w/ cayenne pepper. slather on fish. put in a greased pan. sprinkle w/ grtd parm and either panko or regular bread crumbs.
if it is a thicker fish, make a mariande using dijon mustard, chives, chpd garlic and white wine. and grill. yum! one of our favorites.

The most simple way to make a topping for any kind of fish is simply to fry the fish on one side.
After you turn it over, spread a thin layer of pesto on the cooked side.
It is especially yummy on salmon.
