I think after reading this I will add Taco soup to my new menu planning adventure. ( We seriously eat the same 5 or 6 things all the time.) The first time I make it I will do so with grilled cheese sandwiches just in case I have trouble getting the kids to eat it. I know My oldest daughter and I would love it. My husband and the 2 youngest are a little pickier. Thanks for taking the time to post these recipes.

    Mine is slightly different:

    meat
    salsa
    corn
    broth/bullion
    oregano
    chili powder
    onion
    garlic
    cooked rice
    beans
can of diced tomatoes (or several)

Add in the the broth, can of tomatoes, meat, onion, garlic, spices, salsa, and beans to a pot and let it cook. When it has simmered for a while, add in the rice and the corn and let them heat up. Serve with crushed tortilla chips, a sprinkling of cheese, and a dollop of sour cream.

    NOTES:
There are no amounts. I cook soup in a 5 gallon soup pot and soup is a "leftover bits" meal.

The meat can be leftover chicken, leftover taco meat, leftover sloppy joes, or a mixture of leftover taco meat and sloppy joes. It just depends on what I have on hand to use.
