What to make with leftover ham?
Our financial advisor sends us a wonderful Harry and David ham every year at Christmas. We are not big pork eaters so I'm at a loss as to what to do with the portions I have frozen. The only 5 things I can think of to do with it are:
-Ham and Eggs
-Potato and Ham Soup
-Pinto beans w/Ham.
-Melted Ham and Cheese Sandwiches
-Ham and egg or Ham and Cheese Quesadillas
From what was left I ended up with 8 portions frozen. 4 would be good for soup (including bone), 3 are ham slices and 1 is diced ham. What would you cook with it?

how about a casserol?
i use the mac n cheese with the cheese pouch
at least 2 cups of any veggies u like
4 eggs
1 or 2 cups or more of the cooked ham..as much as u like
1 cup cheese..to ur tastes
preheat oven 350 cook 30-40 mins
ok the steps..
cook the mac as directed on box during last 3 mins add ur veggies(i use frozen whatever)
in a large bowl mix the eggs and the cheese pouch with the ham and and other cheese
drain noodles and veggies add to big bowl stir to mix it all well. dump into greesed lasagna pan. sprinkle with more cheese. enjoy!
I also make a nice chowda from ham and corn and potatoes and a bunch of others let me know if u want em.

I love ham - especially to use the leftovers in this casserole:
In an 8 x 8 pan, place one or two cans of drained green beans. Cover with sliced ham. Pour in a mixutre of one can cream of mushroom soup with 1/4 cup mustard. Cover with shredded cheddar cheese. Cook at 350 degrees until the cheese is bubbly.Travel light. The baggage of the past can only hold you back.

Risotto...use arborio rice if you can find a bargain (our local big lots type store usually has it) or barley. One of my favorite spring risottos is ham and asparagus...sometimes I save a few tips from the spring cheap asparagus and dice the bases that I snap off otherwise and freeze and make risotto with that. Risotto does take some stirring, but aside from that it's 1/2 hour meal that's great for leftovers!

Dice it up. Put it in scrambled eggs, mac and cheese, add to a pizza. Slice it up and put it on sandwiches, warm up slices and serve with veggies for dinner.

I just made ham soup with carrots, onion, celery salt, pepper, egg noodles and ham - just added water to the ham drippings. It turned out DEELISH. You could use green beans instead of the carrots - it's sort of a whatever soup - whatever you have in the house.
I also am throwing some ham onto my salad for tomorrow's lunch - it adds a little salt and zip.

I'm going to make HM macaroni and cheese with Low carb pasta - and adding ham to it. Hope ours is big enough for all the uses I have planned!! ......and I agree it's great is stir fried rice!!

I used diced ham tonight with canned diced potatoes, onions, eggs, and put them in tortillas covered with green chili and cheese ( breakfast burritos)

Ham & Cheese omelets or you could do what I call a breakfast bake. Line the bottom of a baking dish with toast (unbuttered), pour scrambled egg mixture over toast sprinkle in diced ham & shredded cheese, bake @ 350 until done.

I'm making some ham salad for sandwiches with some of mine and then I am freezing the rest. When I am craving a breakfast casserole or more ham salad, I'll thaw a bit of it.
