It you have a food processor, try cutting the meat in cubes when semi frozen. Then pulse a couple of times to grind.

it appears they were cut in 3 roast but frozen roast..i have the rest slow cooking in the oven with a little bit of water and onion salt and pepper and some basil. i added half a cube of beef boullion and whoshire (sp?) sauce

You need the backstraps for a tasty tender roast.

ETA: I've never heard of soaking it in milk either.

I have also never heard of soaking it in milk. I have heard to use a bit of white vinegar in a marinade to reduce gamey taste.

You can also cut chunks off for roasts. I don't know what parts of the deer are good for that though. Sliced thin you can get some little chops.

Hope you find something that works good for you!

    Deer BBQ Sandwiches:
    12 oz deer roast/ham (small)
    1 bay leaf
    1/2 tsp garlic powder
    1/2 tsp onion powder
    1 tsp Worcestershire Sauce
1/2 to 1 cup BBQ Sauce

Cook roast in crock pot . Put enough water to cover one inch over the roast. Place bay leaf, garlic powder, onion powder and Worcestershire Sauce in with roast. Cover and let cook for 5 hours or until meat falls apart when inserting a fork.
Remove roast from water (reserve 1/2 cup stock from meat) and place in medium pot. Pull meat apart and add the reserved stock. Stir and add in the BBQ Sauce. Cover and let simmer on low heat for 20 to 30 minutes. Taste and add more BBQ sauce if nessecary.
Serve on butter toasted buns with or without cole slaw.

I always soak my deer meat. I put it in cold water and change out every time it gets bloody, and then for the last soak, I put half cold water and half milk. This is what I do with the sections you pound and chicken-fry to eat w/ gravy and potatoes. You might also be able to cook the cubed steaks like peppersteak with rice. Haven't tried this yet.

For roasts, cut it in chunks, then soak the chunks the same way. I put this in a slow cooker with cream of mushroom soup and cook on low til tender with a drained can of mushroom pieces. You can add potatoes and carrots to serve like a roast, or stir in sour cream at the end and serve it like stroganoff over noodles or rice. Instead of cream of mushroom, you could pour bbq sauce over it and slow cook, then drain, add more bbq sauce, shred, and serve as sandwiches. SO good w/ baked beans and fries!

When I make bbq from it I just salt it and then wrap it in foil. Bake at 350 until done. Shred the meat into a pan and add bbq sauce to it. Heat and then put on buns and eat!

I have never soaked any of my venison before, and we love eating it. I haven't bought any beef for 2 weeks. and we don't miss it. we love chili, brown the burger and put into slow cooker, add 2 cans of chili beans and 1 can of diced tomatos 2 cans of water, let cook for about 4 hours.
