Homemade sandwich bread
I made my first loaf of homemade bread the other day and it turned out just fine. It was a very simple recipe for white bread and everyone seemed to enjoy it. The only problem was it didn't make good sandwhich bread. It was too difficult to cut thin enough and extremely crumbly. It pretty much just feel apart whenever I tried to slice it thinly. Does anyone have a good recipe for white bread that is good for sandwiches? The loaf I made was good for about 3 days before it started to taste (slightly) stale, which is fine, but if we can't use it for sandwiches, then it's not going to get used up quick enough and I'll be constantly wasting it.

These are breads I like. You need to be sure that the dough is not too dry - that will cause it to be a crumbly bread.

Also, I often make the bread into rolls, as I like those better for sandwiches than slices of bread. They hold together better than slices, and I just like rolls better, myself.

Probably too much flour.
Add your flour slowly, let it mix and check before adding any more. If the dough is looking a bit too dry, then add just a tsp or so of water. If dough is looking a bit too wet, then add a bit more flour...This had been my experience anyway...hope it helps.
Here's a few more recipes for homemade sandwich bread-hope you and your family enjoys.
White Sandwich bread
3 cups lukewarm water
1/2 cup plus 1 tsp white sugar
2 TBS yeast (or 2 packets)
1 TBS salt
1/2 cup butter (or shortening or salad oil)
10 cups of flour
Instructions:
In a large warmed bowl, add 1 cup lukewarm water, 1 teaspoon white sugar and dissolve yeast. Let stand 10 minutes, then stir until yeast is dissolved. Then stir in 2 cups lukewarm water, 1/2 cup white sugar, salt, and butter. Beat ingredients, then stir in 9 cups of flour, adding them one cup at a time.
Once added, use additional cup of flour to flour counter top surface for kneading. Knead until dough becomes elastic, this should take several minutes (took me about 4-5 minutes).
After kneading, put the dough in a large oiled bowl and flip to coat both sides with oil. Loosely cover bowl with plastic wrap, and place in a warm place. Let it rise for 1 hour. Punch down dough to remove air bubbles and divide into 3 loaves. Shape into loafs and put into greased loaf pans. Cover pans with dishtowels and place in a warm area for another hour. Loaves should double in size. Bake in a pre-heated oven at 400 degrees for 20 minutes.
It is ready when it turns golden brown and sounds hollow when tapped! Remove from pans and cool on a cooling rack!

Homemade white bread
1 pkg. yeast
1 tsp. salt
1 Tbsp. shortening, margarine, or butter
1/4 cup sugar
2 cups water, very warm
Flour (about 6-7 cups)
Shift flour into the above mixture, stirring until it is too thick to stir. Then work with hands, adding flour as needed until it becomes a very stiff dough and won't stick to your hands. Place in a greased bowl, turning to coat top and set in a warm, draft free place about 1 1/2 hours.
Punch down and let rise 1/2 hour more. Make into loaves or rolls. Makes 2 loaves. Bake at 325° for 1 hour for loaves and 35 minutes for rolls. (I found 375° for 25 minutes also works for the rolls.)

If using a bread machine:
Basic Homemade white bread
Makes a 2 pound loaf on regular bread setting:
* 4 cups bread flour
* 2 tbsp dry milk
* 2 tbsp butter (we used margarine)
* 2 tbsp sugar
* 2 tsp salt
* 1 packet of bread maker yeast - about 2 tsp
* 1.25 cups of room temp water
Very simple, put the water in the bottom, add the dry goods on top. Dimple the dry goods with your finger and dump the yeast in the dimple. Press start and walk away...
Of course, there's sourdough breads...one of our favorites...and Brioche bread or Egg bread...Yummmm...so many to choose from...
