    Question 35% cream substititue? (dairy alternative)

    I'm looking to make a mousse that is dairy free. I'm considering using soy/rice/almond milk but am not sure if these have enough 'body' to give the mousse the thickness/texture factor.

    Would any of these milk alternatives work? Or is there another alternative not mentioned here?

    Mmm Yummy coconut milk.

    Make sure you get full fat not low fat, and get Thai Kitchen ( the best without all kinds of additives). Thai Kitchen - Coconut Milk

    Take a can stick it in the freezer for a couple hours to a couple days depending on how your freezer freezes. You need it frozen!!!

    Take out of the freezer, remove the cream ( the frozen part on top, leave the coconut water for another use), and add 1 Tablespoon confectionery sugar ( I make my own) and 1 teaspoon vanilla or to taste, whipping it in a circular motion until it is whipped cream.

    Will turn out like whipped cream, not sure if this is texture you are looking for but it tastes yummy....hehe

    Thanks polly - I'm trying to swap out or tweak a recipe....it calls for 2 cups of 35% cream

    OMG Happymama - thank you for that suggestion! I'd be melting dairy free dark chocolate into it - so coconutty chocoatley cake with raspberry filling and on top! Yum!

    Dr Oetker - has cornstarch in it - another one of my sis's no no's

    I found a recipe on the food channel website for a flourless chocolate cake (uses eggs instead of flour) and uses a chocolate mousse to frost it with a raspberry jam filling and fresh raspberries on top. Just trying to figure out how to make the mousse w/o cream and enough to frost the cake.

    I make a chocolate coconut milk ice-cream, and coconut chocolate raspberry truffles and those flavors all go so nice together. You dessert sounds scrumptious!!

    Head smacking moment( just remembered this dessert) I am sure this would work for you, as I have made this cake:?Lighter than Air? Chocolate Cake | Gluten Free Recipes and substituted the coconut milk for the cream and it turned out great.

    Thats pretty close to what I'm going to 'attempt' to make for my sister and rest of the family for Christmas dinner - which I'm not sure when it will be. Last year we had it the 2nd wknd of December b/c everyone had 'other' plans...and on the 25th - I took dad down to the casino and for the buffet lunch No one was there and we had our choice of the slots!

    I have used silken tofu to make chocolate mousse before and it was delicious!

    Melt the chocolate into the tofu, blend well and leave it to set.
