These two things make a HUGE DIFFERENCE on quality after a year....or two......or three.
The reason I said cook it alone is because then if it was really bad you wouldn't be losing all the veggies and etc. that you cooked with it. I WOULD season the heck out of it though.
I think it will be fine.
