My favorite meal that cooks in under 20 minutes is pasta and meat sauce. You can take out the ground beef from the meat if the person/family doesn't eat meat.

I also will substitute the meat sauce with pink sauce if I'm in the mood for something more tasty. Pink sauce is simply tomato sauce with heavy cream mixed in-- I throw in shredded cheese to thicken it up. What I'll normally do if I'm sharing my sauce is wash out the tomato sauce jar I started with and fill it up-- that goes to my friend and I normally have some left over that I can use for a dinner myself and my hubby.

Don't forget the veggies-- my Mom would sometimes mix in a can of corn with the meat sauce and I still carry on that tradition since its so yummy. But even just including a small bag of salad from the store (or put together a salad in a plastic container) would be very tasty to go along with anything else that you make. I would appreciate it at least-- but I have odd times where I just crave a good salad.

Btw-- I think it is so very sweet of you to care for these people in such a way.
