What is your favorite sauce for pasta?
I am looking for more than the traditional red tomato sauce types even though variations on those would be nice.
Sauces that would go good over mixed veggies. Thanks!Married 22 years to Mark

Since I can't eat tomatoes I would say a pesto sauce. And it does taste good on vegetables.

I would second Alfredo sauce for veggies. For pasta, I make my own marinara, and that is my favourite.

Saute a package of sliced mushrooms in butter and garlic. When its done, add one can of drained pitted black olives and just enough water to blend with a stick blender, or put all of it in a regular blender and pulse until blended but still chunky. Looks a mess but tastes great.

I saute garlic and olives/capers or mushrooms and after tossing the pasta in it... I sprinkle Parmesan cheese over it like heavy snow on a plate full of goodness.

Good old faithful: 1/2c butter or olive oil heating in a skillet w/fresh minced garlic and chilli flakes - let infuse together. Add well drained pasta and coat well. Let sit in skillet a few mins on low heat so the sauce seeps into the pasta. Top w/freshly minced herbs if desired. Parm optional.
I also LOVE alfredo or a blush sauce
Have you tried simmering cherry tomatoes in olive oil in skillet until they burst and juices meld with the olive oil? You can add garlic if desired and season accordingly. Yum!2012: The Year Of The Purge!

When I am just making it for myself, I throw on a little pesto sauce, I really like that.
This is a fun twist on a tomato sauce, you use diced tomatoes, Penne With Tomato Herb Cream Sauce Recipe - Food.com - 64635

Pesto is great, and freezes well. If you don't like the high price of pine nuts, you can substitute sunflower seeds. The change isn't too dramatic.
Olive oil, or butter, and spices/herbs is an easy go to. Add parmesan cheese and mushrooms.

Stick of real butter, chopped onions, a can of drained mushroom and some peeled deveined shrimp; saute until onions are clear; add 2 cups half and half and heat thoroughly then add some grated Romano cheese, salt & pepper to taste & heat throroughly and pour over some angel hair pasta. Service with buttered garlic bread. My FAVE.

Just tonight we had chicken and broccoli alfredo on pasta. Sauce is easy to make and you can use whatever veggies you want and add chicken or shrimp if you want meat. Yum!
Quick and Easy Alfredo Sauce Recipe - Allrecipes.com I use only a couple tbs butter, real garlic, low fat cream cheese, a pinch of nutmeg and salt (garlic salt)to taste. Lower in calories than the real deal & still tastes awesome! I halved the recipe & served it on 8 oz of pasta.
Edited to add that my red sauce of choice is the one I use in my Lasagna
You can go meatless or change the sausage to ground beef/ground turkey if you prefer.Last edited by Darlene; 12-28-2011 at 07:51 PM.
