    Default what to do with 20 pounds of potatoes

    I have 20 pounds of potatoes,10 pounds need to be used asap... i thought about freezing them but not sure how... can you can potatoes? Id apreciate any suggestions

    You can , pressure can pototoes. I use the raw pack method.

    I have tried freezing them after mashing them. They still taste okay but the texture is off.

    Can you keep them in a dry cool spot for awhile ?
    That works good. Brown paper bag to keep the light off them.

    I just finished a 50 pound sack off. Now am going to start the other one. I should check through it, and make sure there are no bad ones yet. We use a lot of potatoes.

    You can make mashed potatoes and freeze in containers. They will microwave beautifully.

    Oh no, I just read your post Lady. I'm sorry that happened to you. If you mic them on defrost and stir, and continue until potatoes are heated through they turn out beautifully.

    I wonder if you could dehydrate them and use them to make Au Gratin potatoes, like the kind that come in the box?

    I've done hash browns and stuffed baked potatoes. Freezing Potatoes

    And I have done mashed: How to Freeze Mashed Potatoes

    The mashed potatoes came out a little watery, but a few minutes reheating in the pan and they were fine.

    I made french frys out of them cooked them just a bit and quick froze them and put in a zip lock bag so I could take out what I wanted..When I wanted frys I just dropped them in baby fryer and cooked until golden brown..I found I had to part way cook them before I froze them..I have also put on a cookie sheet sprayed with pam and baked..

    Twice baked potatoes freeze well too..

    You could probably dice and freeze, use later in soups or casseroles where they break down a bit anyway.

    when you can potatoes, do they taste good or have a different taste like when you freeze them.
    How do you use the potatoes after you can them?
    I am asking because there will be a time that they go on sale and I never take advantage of the sale because I don't know what to do with them. Now that I have a pressure canner.........things are different.

    I learned how to make twice-stuffed potatoes from this blog entry. Basically, wash, bake, cool, then scoop out the inside. Mix with cheese, milk, sour cream. Stuff and freeze.

    Can you prep them and freeze them in portions (raw)? French fries, wedges, shredded for hash browns, diced/cubed. Think of what you buy in the grocery store freezer sections.

    Cook up mashed taters, potato cakes, soups/chowders, baked allow to cool and freeze - talk about your own fast food!

    Dad par boils them and then freezes them whole and pulls them out as needed and boils them through to serve with meals.

    You cannot freeze raw potatoes. They turn black.

    I have frozen potatoes and root veg cooked just over half way in the oven, let them cool on the baking sheet and then threw the whole thing in the freezer. Take it out and toss into freezer bags. Then when I wanted to cook them, put them on a baking sheet and cook til done.

    something else I do when i have tons of potatoes is make potato gnocchis. Potato Gnocchi Recipe | Simply Recipes If there is any left, which there never are in this house lol, you can freeze them without the sauce. I do this when the kids are all at home, they like to help make the 'snakes' the long ropes that you cut the gnocchis off of.
