    Question What do you do with leftover pancake mix

    The kids and dh love pancakes, so I make them quite often. I often have leftover mix, so I cook up the extra mix. Left on the table for them to eat at random, they soon disappear. They love them cold.

    I'd love to find some other ways to use up the mix though. Any thoughts?

    I never have leftover mix. What pancakes don't get eaten (and that only happens if I make more than one batch of mix), get frozen for future meals.

    I use the leftover pancake batter for dipping onion rings in it and then frying them. . . easy and tasty.

    mmm to those onion rings, great idea!

    I just make a big batch on purpose evne if it's just me and dh and freeze them for future breakfasts.

    I never have any leftovers, pancakes are Jack's favorite! LOL

    But I was thinking along the lines of Denise, only I forgot about onion rings. How about dipped veggies (broccoli, carrot sticks, cauliflower etc.) and deep frying? Not great for the waistline but something different.

    My sister uses the batter for frying chicken also. I have never tried it but she says it's good.

    We very rarely have leftover mix, but I have made fried oreo's with the left overs before!!

    If you're talking about the dry mix, and not the wet batter, I've mixed it with cornmeal and seasonings to dip catfish in before frying.
